In a large bowl, combine the oats, peanut butter, honey, vanilla, and chia seeds. Mix well until thoroughly combined. Add in chocolate chips and stir well.
Shape into 18 small balls. Refrigerate until firm, if desired.
Notes
If you find the mixture too dry, add a bit more honey to keep these bites sticking together.The energy bites keep best in the refrigerator in an airtight container for up to two weeks. They can be left on the counter, but will soften up.
