Banana Bread Cobbler

Easy Banana Cobbler is filled with the flavors of banana bread, but in cobbler form. Simple to make and loaded with flavor, this banana dessert is perfect when served warm with a scoop of vanilla ice cream!

  • 1 box (15.25 ounce) yellow cake mix
  • 1 cup whole OR 2% milk
  • ½ cup unsalted butter melted
  • ½ cup butterscotch chips
  • 4-5 medium bananas sliced
  • cup packed light brown sugar divided
  • ½ cup water
  • 1 teaspoon ground cinnamon
  • 1 cup old-fashioned oats
  • ½ cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ cup chopped walnuts if desired
  • ½ cup unsalted butter softened
  • Vanilla ice cream and more banana slices for topping if desired


  • Preheat oven to 375°F. Lightly grease a 9x13 baking pan with cooking spray. Set aside.
  • In a large bowl, stir together cake mix, milk, and melted butter until combined. Stir in butterscotch chips. Spread into prepared pan. Top evenly with banana slices (slices will overlap). Set aside.
  • In a small bowl, whisk together ½ cup brown sugar, ½ cup warm water, and cinnamon. Slowly pour all over bananas.
  • In a medium bowl, stir together oats, flour, walnuts (if using), softened butter, and remaining ¾ cup brown sugar with a fork until combined and crumbly. Sprinkle mixture onto bananas.
  • Bake until golden brown and bubbly, about 40-45 minutes. Remove from oven and let cool for 20 minutes. Serve with vanilla ice cream and more banana slices, if desired.
