Preheat oven to 375F. Lightly grease a 9x13-inch baking dish with non-stick cooking spray. Pour about 1/2 cup of salsa onto bottom of dish. Set aside.
Season both sides of each chicken breast evenly with salt, pepper, and taco seasoning. Spread chicken on top of salsa in pan in an even layer. Pour remaining salsa over tops of chicken.
Bake for 30-40 minutes, or until internal temperature reaches 165F.
Remove from oven, sprinkle with shredded cheese, and return to oven until cheese is melted, about 3-4 minutes.
Garnish with fresh cilantro, if desired.
