Glazed Eggnog Donuts

These Glazed Eggnog Donuts bake up soft, fluffy and are filled with sweet eggnog and hints of nutmeg. They're easy to whip up and make the perfect breakfast or dessert for the holidays!

Ingredients

  • 2 cups all-purpose flour
  • ½ cup granulated sugar
  • 1 teaspoon baking power
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon ground nutmeg
  • 1 cup eggnog
  • 1 egg
  • 4 tablespoons melted coconut oil
  • 1 teaspoon vanilla bean paste (or vanilla extract)

FOR THE EGGNOG GLAZE

  • cups powdered sugar
  • 5-6 tablespoons eggnog
  • ½ teaspoon vanilla bean paste (or vanilla extract)
  • Dash of nutmeg

Instructions

  • Preheat oven to 350F. Lightly grease two (6 count) donut pans with non-stick cooking spray. Set aside.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt and nutmeg.
  • Slowly beat in the eggnog, egg, coconut oil, and vanilla extract using an electric hand mixer or stand mixer with fitted paddle attachment.
  • Spoon mixture into a large ziplock bag and cut tip of bottom corner. Pipe mixture into prepared donut pans.
  • Bake for 8-10 minutes, or until donuts are slightly firm. Remove from oven and cool completely before adding glaze.
  • To prepare the glaze, whisk the powdered sugar, eggnog, vanilla, and nutmeg in a medium bowl. Take each donut and dunk halfway into glaze. Repeat with rest of donuts.
