Ingredients

  • 1 pound lean ground beef
  • 2 teaspoons minced garlic
  • 2 teaspoons dried minced onion
  • 3 cups (24 ounce jar) marinara sauce (this is my favorite sauce)
  • 1 package (20 ounce) refrigerated cheese tortellini (frozen also works, see note below)
  • 2 teaspoons dried oregano
  • 2 teaspoons dried thyme
  • Salt and pepper (to taste)
  • cups shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

Instructions

  • Preheat the oven to 350°F. Lightly grease a 9x13 baking dish with cooking spray. Set aside.
  • In a large skillet, add ground beef, minced onion, and minced garlic and brown and crumble ground beef until no longer pink. Drain, wipe skillet if needed, and return beef to skillet.
  • Add sauce, tortellini, oregano, thyme, salt and pepper to skillet. Stir thoroughly to combine. Spread evenly into prepared dish and top with mozzarella and Parmesan cheeses. Cover dish with foil.
  • Bake for 25-30 minutes, or until cheese is melted and casserole is bubbly. Let cool for 5 minutes before serving.

Notes

  • If using frozen tortellini: there is no need to defrost before using; just run under warm water and pat dry. The tortellini will cook in the oven.
  • This dish will last in an airtight container in the refrigerator for up to four days.
