Air Fryer Sweet Potato Wedges

These crispy Air Fryer Sweet Potato Wedges are golden on the outside, tender on the inside, and bursting with flavor from your favorite seasonings. Just a quick toss in olive oil and spices, and they cook up perfectly in the air fryer in under 25 minutes. Perfect for weeknight dinners, snack time, or healthy meal prep!

Ingredients

  • 2 medium sweet potatoes (washed and dried)
  • 2 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • ½ teaspoon smoked paprika (regular paprika also works)
  • ½ teaspoon dried thyme

Instructions

  • Preheat your Air Fryer to 400℉ (if your model has this option).
  • Cut both ends off each sweet potato and then cut each potato in half, and then in half again, to form wedges.
  • Place potatoes into a large bowl or resealable bag. Add the olive oil, garlic powder, onion powder, salt, pepper, paprika, and thyme. Toss well to coat or seal bag and shake well.
  • Line the air fryer basket with parchment paper or spray well with cooking spray. Place potatoes in an even, single layer in basket, being careful not to overcrowd (as we want crisp wedges, not soft and soggy). You may need to work in batches, depending on how many wedges you have.
  • Cook for 8 minutes, remove basket and flip each wedge, and continue to cook for 7-9 minutes, or until the outsides of wedges are crisp and then center of potatoes are soft when pricked with a fork. Serve immediately with your favorite dipping sauce.

Notes

  • Leftover wedges will keep in an airtight container in the refrigerator for up to three days.
  • Be sure to slice the potatoes into uniform wedges so that they cook evenly.
  • Be careful not to overcrowd the air fryer basket, otherwise the potatoes may not cook evenly and won't turn out as crisp. You may need to cook the wedges in several batches, depending on how many you have.
  • To Reheat in the Air Fryer: Pop them back in the air fryer basket at 375°F for 3–5 minutes to restore crispiness.
  • To Reheat in the Oven: Preheat your oven to 400°F and spread the wedges in a single layer on a baking sheet. Bake for 7-9 minutes, or until warmed through and crisp.
