These easy Applesauce Muffins are soft, moist, and packed with warm cinnamon flavor in every bite. Made with simple ingredients and a crunchy sugar topping, these bakery-style muffins are perfect for breakfast, snacks, or meal prep!

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ¾ cup unsweetened applesauce
  • ½ cup granulated sugar
  • ½ cup packed light brown sugar
  • ½ cup unsalted butter, melted and cooled slightly (vegetable oil OR melted coconut oil can also be used)
  • 2 large eggs
  • 2 teaspoons vanilla bean paste (or vanilla extract)
  • 2 tablespoons turbinado sugar for topping, if desired (or sugar in the raw)

Instructions

  • Preheat oven to 425℉. Line a 12-count muffin pan with paper liners. Set aside.
  • In a medium bowl, whisk the flour, cinnamon, baking powder, baking soda, nutmeg, and salt. Set aside.
  • In a large bowl, whisk the applesauce, granulated sugar, brown sugar, butter, eggs, and vanilla until combined. Stir in the flour mixture until just combined, being careful not to overmix.
  • Spoon the mixture into each muffin tin, filling about ¾ full. Sprinkle each muffin cup with turbinado sugar.
  • Bake for 5 minutes at 425°F, then, without opening oven door, lower temperature to 375°F and bake for about 18-20 minutes, or until toothpick inserted into center of muffin comes out clean. Remove from oven and let cool for 10 minutes, then remove muffins to a wire rack to cool completely. **Baking at 425°F first helps to achieve that high, bakery style muffin.
