Ingredients

  • 2 pounds (32 ounces) frozen mixed berries (no need to thaw)
  • ½ cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 (15.25 ounce) box golden butter cake mix (yellow or white cake mix will also work)
  • ½ cup unsalted butter, melted

Instructions

  • Preheat oven to 350ºF. Lightly spray a 9×13-inch baking pan or glass dish with non-stick cooking spray.
  • Place frozen berries, sugar, and cornstarch into the dish and stir well to combine. Spread into an even layer on the bottom of the dish.
  • In a small bowl, add cake mix and melted butter and stir until it becomes crumbly. Be careful not to overmix, as the mixture should be crumbly and not smooth. Sprinkle the cake mixture on top of berries in an even layer.
  • Bake for 45-50 minutes, or until top is golden and cooked through. Remove from oven and let cool for 10 minutes before serving. Serve warm with vanilla ice cream or whipped cream, if desired.

Notes

  • Leftovers will keep in an airtight container at room temperature for up to four days.
  • To freeze: Place in a freezer-safe container or bag in the freezer for up to three months. When ready to serve, let thaw completely in the refrigerator.
