Prepare and bake brownies according to package directions, being careful not to overbake. Let cool completely.
Cut off the edges of the brownies and discard (or save to eat), as I find they can be hard and will affect the texture of the truffles. Using a fork, scrape the brownies into a bowl and then mash together until soft.
Scoop a heaping tablespoon of brownie, roll into a ball, and then place onto a sheet pan lined with parchment paper. Repeat with the remaining brownies. Optional: chill for at least 15 minutes to harden slightly.
Add chocolate wafers or chocolate chips to a microwave safe bowl and microwave for 1-2 minutes or until chocolate is melted, stirring every 30 seconds so it doesn't burn.
Use a fork or a toothpick to dip each brownie ball into the melted chocolate to cover completely. Place back onto parchment paper and top with sprinkles. Repeat with remaining brownie balls. Store truffles in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week.
