Ingredients

  • 3 large very ripe bananas, mashed (roughly 1½ cups)
  • 2 eggs
  • cup melted coconut oil (vegetable oil can also be used)
  • 1 (15.25 ounce) box yellow cake mix (I used this kind)

Optional:

Instructions

  • Preheat oven to 350℉. Grease a 9x5 loaf pan with cooking spray. Set aside.
  • In a large mixing bowl, add the mashed bananas, eggs, oil, and vanilla (if using) and whisk well. Stir in cake mix until just combined, being careful not to overmix (otherwise the bread will end up dense and not light and fluffy).
  • Pour batter into prepared loaf pan. Bake for 45-50 minutes, or until the edges are set and a toothpick inserted into the center comes out mostly clean. Let cool in pan for 5 minutes, then remove bread and place on a wire rack to cool completely.

Notes

  • Leftovers will keep in an airtight container at room temperature for up to five days.
  • Tip: This banana bread is even better the next day, as the flavors will have time to blend together.
  • To freeze: place bread in a freezer-safe container or bag and freeze for up to three months. When ready to serve, let thaw completely in the refrigerator.
  • Variations: Add some chocolate chips, peanut butter chips, or a swirl of nutella to the batter for a fun twist.
