These Chicken Bites are juicy, flavorful, and cooked in a simple garlic butter sauce for an easy dinner that’s ready in about 20 minutes. Made with boneless chicken thighs and simple ingredients, these crispy chicken bites are perfect for busy weeknights, meal prep, or serving over rice, pasta, or salads!
1poundboneless skinless chicken thighs(cut into bite-sized pieces)
3tablespoonscornstarch
1teaspoongarlic powder
1teaspoonItalian seasoning
1teaspoonsalt
½teaspoondry mustard powder
2tablespoonsolive oil
For the Garlic Butter Sauce:
3tablespoonsunsalted butter
2clovesgarlic, minced
1-2teaspoonslemon juice OR balsamic vinegar
Chopped fresh parsley, for garnish(if desired)
Instructions
In a large bowl or gallon sized bag, add chicken, cornstarch, garlic powder, Italian seasoning, salt, and mustard powder. Toss to combine until evenly coated.
In a large skillet, heat olive oil over medium heat. Add chicken bites in a single layer and cook for 6-8 minutes, stirring/flipping occasionally, until golden and cooked through (and the internal temperature reaches 165℉).
Remove chicken bites to a separate plate so that you can make the garlic butter sauce.
To make the sauce: in the same skillet as the chicken, melt butter over medium heat. Add in minced garlic and lemon juice/balsamic vinegar and cook for 1-2 minutes, or until garlic is fragrant (but be careful not to burn it).
Add chicken bites back to the skillet and stir to coat. Add fresh parsley, if desired. Serve immediately.
Notes
Leftovers will keep in an airtight container in the refrigerator for up to 4 days.
Reheat gently in a skillet over medium heat to maintain texture. Microwaving works but may soften the bites.
