Ingredients

  • cups old-fashioned oats
  • cups all-purpose flour
  • 2 teaspoons apple pie spice
  • ½ teaspoon salt
  • ¼ teaspoon baking soda
  • ¾ cups unsalted butter softened
  • cups light brown sugar firmly packed
  • 1 egg
  • ¼ cups milk any kind (I used 2%)
  • 2 teaspoons vanilla bean paste or vanilla extract
  • 1 cup diced apple (about 2 apples. I used fuji, but any kind will do)

Glaze:

  • cups confectioner's sugar
  • 2-3 tablespoons milk , any kind (I used 2%)

Instructions

Make the cookies:

  • Preheat oven to 350°F. Line two large baking pans with parchment paper. Set aside.
  • In a large bowl, mix together the oats, flour, apple pie spice, salt, and baking soda. Set aside.
  • In a medium bowl, cream together the butter and brown sugar with a hand mixer or stand mixer with fitted paddle attachment until light and fluffy, about 3-4 minutes. Beat in egg, ¼ cup milk, and vanilla.
  • Pour wet ingredients into oat mixture, about a ½ cup at a time, stirring until just combined. Gently fold in apples.
  • Drop mixture by about 1 heaping tablespoon onto prepared baking pans about 2 inches apart.
  • Bake for 16-18 minutes, or until lightly golden brown. Remove from oven and let cool for 5 minutes, then move to wire racks to cool completely.

Make the glaze:

  • While cookies are cooling, prepare glaze. n a small bowl, whisk together the confectioner's sugar and 2 tablespoons milk. Drizzle over cooled cookies.
