  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • ½ cup packed light brown sugar
  • 1 (15 ounce) can pure pumpkin
  • 2 eggs yolks and white separated
  • cup plain Greek yogurt
  • ¾ cup milk any kind
  • 1 teaspoon vanilla bean paste or vanilla extract


  • Preheat waffle iron according to your model's directions.
  • In a large bowl, combine the flour, baking powder, baking soda, salt, and pumpkin pie spice. Set aside.
  • In a medium bowl, add brown sugar, pumpkin, egg yolks, yogurt, milk, and vanilla. Beat until combined with an electric hand mixer or stand mixer with fitted paddle attachment.
  • Pour pumpkin mixture into flour mixture and beat until just combined. Set aside.
  • In another medium bowl, beat egg whites until stiff, about 3-4 minutes. Gently fold into batter.
  • Lightly grease waffle iron with non-stick cooking spray, if needed. Add batter and cook until lightly golden brown and cooked through, roughly 3-4 minutes.
  • Serve immediately with butter and warm maple syrup, if desired.
