Glazed Peach Bread

  • 2 cups all-purpose flour
  • teaspoons baking power
  • 1 teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • ½ cup unsalted butter , softened
  • ½ cup light brown sugar , packed
  • ¼ cup granulated sugar
  • 2 eggs
  • 2 teaspoons vanilla bean paste (or vanilla extract)
  • ¼ cup vanilla Greek yogurt
  • 2 cups fresh or frozen peaches , peeled and diced (about 4 peaches)

Streusel Topping

  • ½ cup light brown sugar , packed
  • 1 tablespoon granulated sugar
  • teaspoons ground cinnamon
  • ¼ cup unsalted butter , melted
  • cup all-purpose flour


  • ¾ cup powdered sugar
  • 3 tablespoons heavy cream
  • 1 teaspoon vanilla bean paste (or vanilla extract)



  • Preheat oven to 350°F. Lightly coat a two 9x5-inch loaf pans with non-stick cooking spray. Alternatively, you can use one loaf pan and one muffin pan. Set aside.
  • In a medium bowl, combine the flour, baking powder, baking soda, cinnamon and salt. Set aside.
  • In a large bowl, cream together the butter, brown sugar, and white sugar until light and fluffy. Slowly beat in the eggs, vanilla bean paste, and yogurt.
  • Add in the flour mixture to the wet ingredients and mix just until combined, being careful not to over mix. Gently fold in the diced peaches. Spoon batter into prepared pans, filling half-way.

Streusel topping:

  • To make the streusel, combine the brown sugar, white sugar, cinnamon, melted butter, and flour until thoroughly mixed together. Sprinkle over batter.
  • Bake for 55-60 minutes, or until toothpick inserted into middle of bread comes out clean. Remove from oven and let cool completely.


  • To prepare the glaze, add powdered sugar, heavy cream, and vanilla bean paste in a small bowl. Drizzle over cooled bread.
