Ingredients

  • cups all-purpose flour
  • 2 teaspoons baking soda
  • teaspoons salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ¼ teaspoon ground ginger
  • 2 teaspoons pumpkin pie spice
  • 1 (15 ounce) can pumpkin puree
  • 4 eggs
  • 1 cup melted coconut oil
  • cup water
  • 2 cups white sugar
  • 1 cup creamy peanut butter
  • 1 cup plus 2 tablespoons dark chocolate chips

Instructions

  • Preheat oven to 350F. Lightly spray two loaf pans or one loaf pan and a 12 cup muffin tin with non-stick cooking spray. Set aside.
  • In a medium bowl, combine the flour, baking soda, salt, cinnamon, nutmeg, cloves, ginger, and pumpkin pie spice. Set aside.
  • In a large bowl, mix together the pumpkin, eggs, oil, water, and sugar until thoroughly combined.
  • Stir the dry ingredients into the pumpkin mixture until just blended.
  • Fold in the peanut butter and 1 cup of chocolate chips.
  • Pour half of the batter into each loaf pan (or half into one loaf pan and evenly divide the rest into the muffin tins).Sprinkle remaining 2 tablespoons of chocolate chips over tops of loaves.
  • Bake for about 50 minutes to 1 hour, or until golden brown and toothpick inserted in middle comes out clean. If making muffins, they will take less time to bake. Check them after 20 minutes.
  • Remove from oven and let cool in pans for 15 minutes, then remove from pans and move to a wire rack to cool completely.
