These Pumpkin Pie Bites are a healthy, no-bake version of the classic dessert, but made easy without all of the prep work. Made with ground oats, pumpkin purée, peanut butter, and warm spices, these pumpkin energy balls make the perfect fall treat!

Ingredients

  • ¼ cup pure pumpkin
  • ¼ cup honey
  • ½ cup creamy peanut butter (see note below)
  • 1 cup oat flour (I like to grind old-fashioned oats)
  • 1 tablespoon chia seeds
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon ground cinnamon

Instructions

  • In a large bowl, add the pumpkin, honey, and peanut butter and stir well to combine.
  • Add in the ground oats, chia seeds, cinnamon, and pumpkin pie spice. Stir well.
  • Using a small spoon or scoop, roll into balls. Keep refrigerated until ready to serve.

Notes

  • If using creamy peanut butter, it should mix well into the pumpkin mixture. However, you can warm it just slightly so it's easier to stir, if needed.
  • Pumpkin Pie Bites will keep covered in the refrigerator for up to 2 weeks.
