I love creating easy and delicious recipes that can be ready in no time. Whether you work long hours, have kids, or just can’t seem to find enough time to cook between the busyness of life, you shouldn’t have to sacrifice by eating out or making packaged meals all the time.
My motto at Pumpkin ‘N Spice is “Where easy meets delicious” and I really mean that! I’m here to show you that cooking and baking can be both fun and tasty. By developing dishes that are ready without the time-consuming prep work and foreign ingredients, you can create grab ‘n go breakfasts, healthy snacks, zesty appetizers, savory main dishes, decadent desserts, and thirst-quenching drinks.
While the majority of recipes on Pumpkin ‘N Spice are simple and easy to prepare, I’ve gotten a lot of requests for more single-serve recipes, or Meals for One. So, I decided to share one recipe a month that are specifically geared towards just one serving. That means it’s made for just one person, no leftovers, just a recipe designed to feed one.
So, what if you’re a family of two, or four, or six? Not to worry! All of my Meals for One recipes are easily adaptable to fit the needs of any family. Simply double, triple, or quadruple the ingredients, and the Meal for One dish can feed a family of any size!
