I’m not one to sleep straight through the night. In fact, I can’t even remember the last time that I’ve gone to bed and slept straight through until it was time to get up. I don’t have any kids or a pet that wakes me up, but still, it happens every night.

The hubster and I are very light sleepers. A lot of times, if he moves or gets up in the middle of the night for some reason, I wake up. And the same goes for him, too. We are eerily similar in that way.

We’re pretty used to it by now, and even if I get the bed all to myself if the hubster is out of town, I still wake up throughout the night. Now, I’m not complaining and it doesn’t really bother me too much.

But what does bother me is that sometimes when I wake up at 3am, my stomach starts growling. Growling! Of course, sleep wins over my hunger pangs, at least until I get up in the morning.

And these days, having a cup of coffee and some yogurt while I work on blog tasks is my morning routine. It makes the perfect, quick breakfast and is something that I look forward to.

So now that fall is here, I decided to put all of those apples to good use and whip up this Apple Pie Yogurt Parfait. Packed with creamy vanilla yogurt, apple pie granola, and caramelized apples, this parfait is full of protein and fall flavors. It’s a great way to spice up your morning breakfast or afternoon snack.

Remember that crunchy and oh-so delicious Apple Pie Granola that I shared with you two weeks ago?

Well, it’s returned in this Apple Pie Yogurt Parfait. I love adding a little crunch to my yogurt, so using this flavorful granola was a win-win situation in my book. I’ve made this granola three times since I first tested it back in August. It’s SO good that I’ve been trying to sneak it into baked goods whenever I can.

And those caramelized apples on top of this yogurt? Perfection!

If you remember those Apple Cinnamon Pancakes that I shared with you a few weeks ago, I used the same apples in the parfait, but didn’t include the syrup.

It’s a simple combination that tastes like delicious apple pie and takes this parfait to a whole new level.And finally, the yogurt. Protein-packed and creamy, I used a vanilla Greek yogurt for the base of the Apple Pie Yogurt Parfait. But feel free to use whatever yogurt that you prefer.

So when my stomach starts growling at 3am, I happily remember that I’ve got this delicious Apple Pie Yogurt Parfait to look forward to for breakfast. It makes the perfect, protein-packed meal or mid-morning snack!

Apple Pie Yogurt Parfait

Ingredients

FOR THE CARAMELIZED APPLES:

  • 2 tablespoons unsalted butter
  • 2 apples peeled, cored, and diced
  • 2 tablespoons packed light brown sugar
  • 1 teaspoon ground cinnamon

FOR THE YOGURT PARFAIT:

  • 2 cups vanilla Greek yogurt
  • 1 cup Apple Pie Granola or granola of choice

Instructions

  • In a medium saucepan, melt butter over low heat. Add the apples, brown sugar, and cinnamon. Stir to combine.
  • Heat apple mixture over medium heat for 5-6 minutes, or until apples are tender. Remove from heat.
  • While apples are cooking, prepare the parfaits. Spread 1/2 cup of yogurt onto the bottom of two glasses or bowls. Top with 1/4 cup granola, followed by 1/2 cup caramelized apples. Repeat with the second layer in each glass.
  • Serve immediately.

    I’ve always loved sleeping straight through, which is why kids were such a literal rude awakening! But for you, no problem. If you ever have kids, you’re ready!
    But then it’s hard to resist the snack if you’re up anyway. This would be a great incentive to wait for breakfast!

    I would be a hot mess if I woke up like you do lol. I sleep like a rock and my alarm often doesn’t even wake me. But that doesn’t change my grumbly stomach and need for fuel early in the day. I’ve been going to boot camp early morning and by the time it’s done I’m starving. This is the perfect combo of protein and carbs for after a workout. I’m so making a big batch of those apples!! Delish!

    Oh my gawsh, Gayle, I NEVER sleep through the night either. I am SUCH a bad sleeper that my husband and I actually have different bedrooms. Might sound weird to some people, but it prevents me from waking him up every 20 minutes due to my relentless tossing and turning. Plus after years of him being exhausted from me keeping him up, we found separate rooms works for us. So, I totally feel your pain!! Anyways, these parfaits look amazing! I swear you are the healthy breakfast QUEEN! I loved your apple pie granola, so i’m super excited to see its return here in these parfaits!     What a great way to start the day! I’m lucky in that I have noo trouble sleeping through the night (except for last night when my puppy was sick all night!), but I definitely don’t get enough sleep and this would help me get up in the morning 🙂

    I used to always sleep through the night without waking up — before I had kids mainly. The kids are older and now the dog wakes me up! I think I might be too excited to sleep with this to wake up to — breakfasts like this are such a treat. I’m loving those caramelized apples!
