Apple Pie Yogurt Parfait
Packed with creamy vanilla yogurt, apple pie granola, and caramelized apples, this Apple Pie Yogurt Parfaitย is full of protein and fall flavors. It’s a great way to spice up your morning breakfast or afternoon snack!
I’m not one to sleep straight through the night. In fact, I can’t even remember the last time that I’ve gone to bed and slept straight through until it was time to get up. I don’t have any kids or a pet that wakes me up, but still, it happens every night.
The hubster and I are very light sleepers. A lot of times, if he moves or gets up in the middle of the night for some reason, I wake up. And the same goes for him, too. We are eerily similar in that way.
We’re pretty used to it by now, and even if I get the bed all to myself if the hubster is out of town, I still wake up throughout the night. Now, I’m not complaining and it doesn’t really bother me too much.
But what does bother me is that sometimes when I wake up at 3am, my stomach starts growling. Growling! Of course, sleep wins over my hunger pangs, at least until I get up in the morning.

And these days, having a cup of coffee and some yogurt while I work on blog tasks is my morning routine. It makes the perfect, quick breakfast and is something that I look forward to.
So now that fall is here, I decided to put all of those apples to good use and whip up this Apple Pie Yogurt Parfait. Packed with creamy vanilla yogurt, apple pie granola, and caramelized apples, this parfait is full of protein and fall flavors. It’s a great way to spice up your morning breakfast or afternoon snack.
Remember that crunchy and oh-so delicious Apple Pie Granola that I shared with you two weeks ago?
Well, it’s returned in this Apple Pie Yogurt Parfait. I love adding a little crunch to my yogurt, so using this flavorful granola was a win-win situation in my book. I’ve made this granola three times since I first tested it back in August. It’s SO good that I’ve been trying to sneak it into baked goods whenever I can.

And those caramelized apples on top of this yogurt? Perfection!
If you remember those Apple Cinnamon Pancakes that I shared with you a few weeks ago, I used the same apples in the parfait, but didn’t include the syrup.
It’s a simple combination that tastes like delicious apple pie and takes this parfait to a whole new level. And finally, the yogurt. Protein-packed and creamy, I used a vanilla Greek yogurt for the base of the Apple Pie Yogurt Parfait. But feel free to use whatever yogurt that you prefer.

The combination of creamy vanilla yogurt, crunchy granola, and tender apples provides for the perfect fall dish. This parfait is full of flavor, on the healthier side, and bursting with apple goodness. What could be better?
So when my stomach starts growling at 3am, I happily remember that I’ve got this delicious Apple Pie Yogurt Parfait to look forward to for breakfast. It makes the perfect, protein-packed meal or mid-morning snack!

Well, I just love this take on apple pie…and I love even more that you can eat it for breakfast!!
Definitely, Kate! Thanks!
Looks delicious!! I also like simple and quick breakfasts. I wake up starving and just want to eat as soon as haha!! ๐
Thank you, Nadia! I’m all about easy breakfasts like this! ๐
I’ve always loved sleeping straight through, which is why kids were such a literal rude awakening! But for you, no problem. If you ever have kids, you’re ready!
But then it’s hard to resist the snack if you’re up anyway. This would be a great incentive to wait for breakfast!
Very true, Mir! I’ll probably wake up before the kids do! ๐
Oh, those caramelised apples. They sound amazing Gayle and I want to put them on everything.
I don’t sleep though the night either, but that is mostly because of a very naughty cat.
Oh yikes, hope your cat isn’t too bad, Dannii! ๐ Thanks for the apple love!
Yum! This is a win-win in my book, too! Such healthy, tasty, seasonal flavors going on here! Love it!!
Thanks, Annie!
Dear Gayle, these look wonderful! I could go for one this morning. What a healthy and deliciuos treat. xo, Catherine
Thanks for the kind words, Catherine!
I would be a hot mess if I woke up like you do lol. I sleep like a rock and my alarm often doesn’t even wake me. But that doesn’t change my grumbly stomach and need for fuel early in the day. I’ve been going to boot camp early morning and by the time it’s done I’m starving. This is the perfect combo of protein and carbs for after a workout. I’m so making a big batch of those apples!! Delish!
I wish I slept better, but I’m used to it now! ๐ Thanks for the kind words!
What a perfect breakfast ! I love all the flavors here!
Thank you, Kelly!
Gayle I hear you girl. I have been having sleepless nights too lately and not sure why but yes when I wake up middle of the night, all I want is FOOD and this sounds so much healthier than the choices I make when half asleep lol!
Glad you know how I feel, Ami! ๐ Thanks for the apple love!
I love making yogurt parfaits for a healthy dessert/snack at home! This looks delicious Gayle, love the apple pie flavour. The caramelised apples look amazing on the top!
Thank you, Harriet! The caramelized apples definitely make this parfait extra delicious!
Oh my gawsh, Gayle, I NEVER sleep through the night either. I am SUCH a bad sleeper that my husband and I actually have different bedrooms. Might sound weird to some people, but it prevents me from waking him up every 20 minutes due to my relentless tossing and turning. Plus after years of him being exhausted from me keeping him up, we found separate rooms works for us. So, I totally feel your pain!! Anyways, these parfaits look amazing! I swear you are the healthy breakfast QUEEN! I loved your apple pie granola, so i’m super excited to see its return here in these parfaits! With the addition of vanilla yogurt and caramelized apples, this is exactly what I want to eat every morning! Pinned! Cheers, girlfriend!
That’s actually a good idea, Cheyanne! If I’m not feeling well or can’t sleep, I usually sleep in another bedroom, too. I still wake up, but then I don’t feel bad waking up my husband! ๐ Thanks for the yogurt love and pin, friend!
You know exactly what I like for breakfast! The fall flavor of this parfait is calling my name!
Thanks, Jen! It’s one of my favorite fall breakfasts!
What a great way to start the day! I’m lucky in that I have noo trouble sleeping through the night (except for last night when my puppy was sick all night!), but I definitely don’t get enough sleep and this would help me get up in the morning ๐
Thanks, Sues!
This are SO pretty, and make breakfast infinitely more exciting!
Thanks, Nicole! This definitely makes a great breakfast!
Oh I love this idea! Now THIS is breakfast! I am totally a light sleeper too, and now I have kids and it’s even worse! Sometimes I sleep through the night out of pure exhaustion though… LOl
Haha I think I would be up every hour if I had kids! ๐ Thanks for the yogurt love, Ashley!
I used to always sleep through the night without waking up — before I had kids mainly. The kids are older and now the dog wakes me up! I think I might be too excited to sleep with this to wake up to — breakfasts like this are such a treat. I’m loving those caramelized apples!
Thanks, Marcie! The caramelized apples are a sweet touch to this parfait!
I usually wake up at least once during the night ๐ These parfaits look fantastic! Love the flavors, pinning of course!
Thanks for the kind words and pin, Mira!
I actually never wake up during the night, I will have a hard day if that happened! Love these parfait, the combination sounds so delicious!

Thanks for the kind words and for stopping by, Liora!
I wish I could sleep through the night too! It’s even harder now with the kiddos. I would love to wake up to this for breakfast though! Love the apple pie granola with the caramelized apples! Such a great idea!
Thanks, Kelly! This parfait makes the early morning hunger pangs a little more bearable! ๐
Oh, I SO love this breakfast!!! Those apples alone would be heavenly…I can only imagine how good they are when you combine them with that granola! YUM!
