One of my favorite summer treats just happens to involve fresh fruit. Considering that I visit my local farmer’s market on a weekly basis, I’m always stocking up on the good stuff. Strawberries, fresh corn, tomatoes, and blueberries often find its way into my basket. And I just keep on coming back for more!

And dare I mention the word “fall.”

Sorry, guys, but I just had to throw that in there. Fall means that the farmer’s markets will soon come to an end, which signals that winter is just around the horizon. Ok, so I definitely got too far ahead of myself on that one!

After all, I plan on living about 2.1 thousand miles away from the snowy midwest come the winter. Yep, Hawaii is calling my name! Only kidding…that’s just my dream that has yet to come true. But one day…

Let me back up a bit and let’s pretend that I didn’t mention fall or winter. K? Good. Let’s relish what’s left of this gorgeous summer we’ve been having and chow down on this Berry Skillet Cobbler. It’s the perfect summer dish that just screams warm weather, sunshine, and all things fresh and delicious.

nd if you’ve been hanging around here long enough, you know that I’m a huge sucker for mini foods. They’re fun to make, even better to eat, and are just plain adorable! So I couldn’t pass up the chance to use my mini skillets for this cobbler recipe. It makes about eight (3.5 inch) mini skillet cobblers. But if you don’t have those on-hand, feel free to use a regular, 12 inch skillet or casserole dish.

So let’s get down to the recipe!

And the secret ingredient that takes this crust to a whole new level is almond extract. Instead of using vanilla, I swapped it out for almond. It gives the topping such an amazing flavor.

This cobbler also bakes up with a nice crust on the outside and soft on the inside. It’s also the perfect complement for the sweet strawberries and blueberries.

Simply combine some sliced strawberries and blueberries with some sugar and lemon juice. Place it into the bottom of the skillet and spread the brown sugar mixture on top. Within minutes, this Berry Skillet Cobbler is bubbling with flavor and ready to be devoured.

Ingredients
 

  • 1 container (16 ounces) strawberries, sliced
  • 2 cups blueberries, fresh or frozen
  • 1 tablespoon lemon juice
  • 2 tablespoons granulated sugar
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup packed light brown sugar
  • 1 teaspoon almond extract

Instructions
 

  • Preheat oven t o 375°F.
  • In medium bowl, combine the strawberries, blueberries, lemon juice and sugar. Spread onto the bottom of 8 (3.5 inch) skillets or one 12 inch skillet/casserole dish. Set aside.
  • In a medium bowl, mix together flour, baking powder, cinnamon, and salt. Set aside.
  • In a large bowl, cream together butter, brown sugar, and almond extract until smooth. Slowly add dry ingredients to butter mixture until combined. Mixture will be crumbly.
  • Drop mixture by the spoonful (you may need to pat mixture with your hands to form a ball) onto the berries.
  • Bake for 22-25 minutes, or until topping is lightly browned. Remove from oven and serve immediately.
