Growing up, I’ve never really been a picky eater. I’ll try most things once and consider myself fairly open to a lot of different foods.

Sure, there are some things that I detest, such as celery, coleslaw, cottage cheese, potato salads, coconut and cucumbers. You will never see a recipe with any of those ingredients on Pumpkin ‘N Spice because I can’t even stand the smell of them. Strange, right? I’m sure you have foods like that as well, but for me, those are my top “unfavorite” foods.

When I was in preschool, they served us lunch, and one of the meals was vegetable soup with carrots, celery, and coleslaw or cottage cheese. How do you expect a 4 year old to eat that?! I was always the last one at the table and I had to force it down. So, needless to say, those foods remind me of an unpleasant time in my childhood.

I also have those foods that I can eat, but can only have it once in a while, or when I’m really in the mood for it. Meatloaf, spaghetti, stuffed peppers, and chicken Parmesan round out that list. I like red sauce, but I much prefer an alfredo, pesto or garlic and oil sauce. Which is why I’ll never, ever order any type of a red-sauced meal at a restaurant. Call me crazy, but that’s just how I am.

So, I’m sure you’re wondering why in the world I’m sharing a recipe for Baked Chicken Parmesan, right? I mean, it has red sauce on it! Let me tell you, I almost didn’t post this recipe, but I made it because the hubster loves chicken Parmesan, and being the good wife that I am, decided to make it for him.

Chicken Parmesan is one of those dishes that I had too much growing up, and didn’t care for the way it was prepared. But, now that I can get creative and make it any which way I want, I decided to spice it up a bit. And let me tell you, I may just be a Baked Chicken Parmesan convert!

This Baked Chicken Parmesan is coated with a crispy, seasoned crust and baked to perfection. Topped with a rich sauce and mozzarella cheese, this easy meal is perfect for busy weeknights and will be your new favorite dish!

What really sets this Baked Chicken Parmesan apart from the kind I had growing up is the crispy coating on the chicken. Italian bread crumbs are mixed with Parmesan cheese, garlic powder, and some dried oregano. This results in a flavorful crust that adds some zest to the chicken.

And then there’s the marinara sauce. I chose to coat the chicken in a small amount of red sauce and then sprinkle on some mozzarella cheese. It’s the perfect ratio for my not-so-loving red sauce self.

Did I mention how easy this Baked Chicken Parmesan is to make? But, you knew that was coming…after all, I’m all about the easy recipes! In less than 45 minutes, you can have this chicken prepped, baked, and ready to be devoured. How about that for an easy weeknight meal?

Ingredients

  • 4 boneless skinless chicken breasts
  • 2 eggs lightly beaten
  • 2 cups Italian bread crumbs
  • ½ teaspoon garlic powder
  • ¼ teaspoon dried oregano
  • Salt and pepper to taste
  • ½ cup grated Parmesan cheese
  • 1 cup marinara sauce
  • ¾ cup mozzarella cheese

Instructions

  • Preheat oven to 425F. Lightly coat a shallow baking dish with non-stick cooking spray. Set aside.
  • Pour breadcrumbs onto a shallow baking dish or plate. Add garlic powder, oregano, salt, pepper, and Parmesan cheese. Stir to combine.
  • Add beaten eggs to a medium bowl.
  • Take one piece of chicken and add to eggs, ensuring entire piece is coated. Then, dredge chicken in bread crumb mixture, coating all sides, and place onto prepared baking dish. Repeat with rest of chicken.
  • Spray a thin coating of non-stick cooking spray on each piece of chicken. Bake for 25-30 minutes, or until chicken is tender.
  • Remove from oven, spoon 3 tablespoons sauce on each piece and top with mozzarella cheese.
  • Bake for 5 minutes, or until cheese is melted. Serve immediately.

    You're a good wife. I'm sure he was grateful for his red sauce. It looks amazing to me! And we all have those foods we just cannot be around. I will never try and tempt you with cucumber or coconut! Just keep me away from peas and olives. :)

    Ok, I feel ya, Gayle, with certain foods. I'm not a huge fan of cucumber, either, though I do eat it in certain dishes. I find that it overpowers a lot of the times. But, I LOVE coconut! Gimme all the coconut, lol. And, I love chicken parm! Total comfort food! Such a great idea using minimal sauce. That way, you get all gooey cheesy bits and the chicken stays nice and crunchy. That coating sounds delicious. I could eat this any day of the week!

    On your list of foods you don't like are all the things I love, Gayle!! But there isn't much I don't love.. so that's not really saying much! I grew up with chicken parmesan too, and while I like it, I don't eat it too often.. I guess burn out from childhood. But, yours is making want to stop what i'm doing and go make this for dinner!     Aren't you the nicest wife ever. :) My husband is a red sauce fanatic, and while I do love pestos a bit more, there's a time when only red sauce will do for me. I love chicken parm, and this baked version is even better because it's on the healthier side! This looks like the perfect dinner. :)

    Oh I could do some damage to a plate of chicken parm! Red sauce was always one of my favorites. :) Though I'm with you on (most) coleslaws and cottage cheese. I've actually made big strides with cottage cheese in recipes lately, but I've yet to eat it solo. Not sure that day will come lol

      The only thing I can eat cottage cheese in is lasagna...which is rare, because I think I've only tried one lasagna with cottage cheese in it! It LOOKS good to me, but just grosses me out! :)

    I'm totally with you on the celery thing, I do not like it! Unless it's chopped up super small in something then I may go for it haha! This Baked Chicken Parmesan, on the other hand, is something I would easily go for. This looks fantastic, Gayle!
