Now that spring is almost here, I’ve been loving the pops of pastel colors that show up this time of year. The weather is getting a touch warmer and Easter is on the way.

What I’m most looking forward to (besides this easy recipe) are those delicious Cadbury eggs. You know, the chocolate egg with the gooey filling inside? Mmm mmm good! Easter candy is always plentiful and welcomed.

And what better way to celebrate than with these Easter M&M cookie bars! Kids and adults will adore this easy dessert that’s packed with flavor.

What’s better than a cookie in bar form? So easy to make (just press the dough into a pan, no rolling the dough into balls) and great for customizing, too. If you have little helpers in your kitchen, they’ll love spreading the dough and dropping M&Ms onto it.

With a short ingredient list, this is a simple dump-and-bake recipe that’s wonderful for when you want something fast.

This simple recipe really is the best Easter dessert because of the soft and chewy texture. If you need an easy treat for a get-together or celebration, this is it.

I also like that there is no rolling or chilling of the dough. Just spread the cookie batter into the pan and get ready to satisfy your sweet tooth.

With minimal ingredients, this perfect Easter dessert is a great way to get those kiddos involved with making (and taste-testing!) these bars!

Ingredients in Easter Cookie Bars:

  • Sugar cookie mix
  • Chocolate chip cookie mix
  • Eggs
  • Unsalted butter
  • Pastel colored M&Ms

How to Make Easy Cookie Bars:

  1. Preheat oven to 325°F. Lightly grease a 9×13 baking pan with nonstick cooking spray or line with parchment paper. Set aside.
  2. In a large mixing bowl, whisk sugar cookie mix and chocolate chip cookie mix until combined. Using a hand mixer, beat in eggs and softened butter until smooth, about 2-3 minutes.
  3. Fold in ¾ cup of M&Ms and then scoop the batter into the prepared baking pan. Gently spread the dough into an even layer and sprinkle the remaining ¼ cup M&Ms over the top.
  4. Bake for 39-44 minutes or until a toothpick comes out with just crumbs and the edges are fully set and golden brown. If the bars begin to get overly brown before they finish baking you can cover them with tented aluminum foil for the remainder of the baking time.
  5. Remove the bars from the oven and allow them to cool completely before cutting into squares and serving.

Can I Use Another Candy in Place of M&Ms?

Absolutely! Caramel, butterscotch, white chocolate, dark chocolate chips, milk chocolate chips, or mint chocolate chips would be a delicious swap (or addition). You could also add some mini Reese’s peanut butter cups, toffee bits, or Easter sprinkles.

How Long Will The Bars Last?

Bars will last in an airtight container or ziploc bag for up to five days at room temperature. If placed into the refrigerator, bars will last up to two weeks.

Tips for Making the Best Easter Cookies:

  • For easy removal of bars when baked, line the pan with parchment paper. You can also use aluminum foil and lightly grease with cooking spray.
  • To make these cookie bars extra tasty (and pretty), add some M&Ms to the top of the dough and lightly press down just before baking.
  • Keep a close eye on the oven temperature, as you don’t want to overcook the bars. If the bars start to brown on top before they’re finished baking, loosely cover the top of pan with foil.
