Vanilla Sugar Cookie Bars

These Vanilla Sugar Cookie Bars are soft, chewy, and loaded with the classic flavor of sugar cookies, but require no chilling or rolling out the dough. The addition of BAILEYS™ Coffee Creamer Frosted Vanilla Cookie in the bars and frosting gives the treats a deliciously sweet taste that comes together in minutes!
I’m embarrassed to admit this, but I’ve never made sugar cookies before. And they just happen to be my favorite kind of cookie. You know those Lofthouse sugar cookies with the thick layer of frosting on top? I live for those. I hardly ever buy those because I usually end up devouring them all one my own, no sharing with the hubster allowed.
My Aunt is also a great baker, and she makes her famous sugar cookies once or twice a year. When those make an appearance, I feel like I end up in a sugar cookie coma, as I just can’t resist the sweet taste and soft texture.
Although I know that whipping up a batch of sugar cookies is fairly easy, the thought of rolling out the dough and trying to make them perfectly round stresses me out a bit.
So when I had a craving for sugar cookies last week, I resisted the urge to head to the store and instead whipped up these Vanilla Sugar Cookie Bars. These bars are soft, chewy, and loaded with the classic flavor of sugar cookies, but require no chilling or rolling out the dough. The addition of BAILEYS™ Coffee Creamer Frosted Vanilla Cookie in the bars and frosting gives the treats a deliciously sweet taste that comes together in minutes!
Now that I’ve finally made these Vanilla Sugar Cookie Bars, I know they’ll be making a regular occurrence in my house. Because I don’t have to worry about rolling out the dough or cutting into the perfect shape, I can rest easier and just enjoy the delicious taste of sugar cookies, in bar form..
When I tasted the newest holiday flavor from BAILEYS™ Coffee Creamers, I knew I had found my new favorite. It’s perfectly sweet, with hints of vanilla that pair perfectly with bold coffee, or in this case, sugar cookie bars!
The BAILEYS™ Coffee Creamer Frosted Vanilla Cookie gives these bars a subtle hint of flavor, without being too sweet. And the frosting…wow is that good! By adding a touch of creamer to it, the frosting is the perfect complement to the chewy bars. Loaded with sweet flavor, I guarantee you’ll want to keep these Vanilla Sugar Cookie Bars all to yourself!
And like most of my recipes, these Vanilla Sugar Cookie Bars are a breeze to whip up. The batter is made in one bowl and the dough is spread out into a baking pan. Remember, no chilling or rolling out the dough is required.
Once the bars are baked and cooled, feel free to pile on as much of the decadent frosting as you would like. But trust me when I say the more, the better! And I won’t tell if you sneak a spoonful (or three) of the frosting to “test” it out. The BAILEYS™ Coffee Creamer Frosted Vanilla Cookie makes the frosting irresistibly delicious! I just had to make my frosting purple, since it’s my favorite color. But feel free to color the frosting however you would like.
So the next time you’re in the mood for sugar cookies, but don’t feel like going through all of the prep work, try out these easy and oh-so delicious Vanilla Sugar Cookie Bars instead! Soft, chewy, and packed with flavor, these bars will be your new favorite dessert!

Vanilla Sugar Cookie Bars
Ingredients
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- ¼ cup BAILEYS™ Coffee Creamer Frosted Vanilla Cookie, or milk or other creamer of choice
- 1 teaspoon vanilla bean paste, or vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
FROSTING:
- ½ cup unsalted butter, softened
- 1 teaspoon vanilla bean paste, or vanilla extract
- 4-5 tablespoons BAILEYS™ Coffee Creamer Frosted Vanilla Cookie, or milk or other creamer of choice
- 4 cups powdered sugar
- Food coloring, if desired
Instructions
- Preheat oven to 375F. Line a 9x13 baking pan with parchment paper or spray well with cooking spray. Set aside.
- In a large bowl, beat butter and sugar with a hand mixer or stand mixer with fitted paddle attachment until creamy.
- Add in egg, BAILEYS™ Coffee Creamer Frosted Vanilla Cookie (or milk/creamer), and vanilla, Mix until combined. Add in flour, one cup at a time, followed by baking powder and salt. Mix until just combined. Press dough in an even layer into prepared pan.
- Bake for 16-18 minutes, or until edges begin to turn slightly golden. Remove from oven and let cool completely in pan.
- When bars are cool, prepare frosting. In a large bowl, beat butter until creamy. Add in BAILEYS™ Coffee Creamer Frosted Vanilla Cookie, vanilla extract, and powdered sugar until fluffy. Pour in a few drops of food coloring, if desired.
- Spread frosting onto cooled bars. Lift parchment paper out of pan and cut into bars.
Such a creative (and delicious) way to use the coffee creamer! I actually just bought a bottle of the Bailey’s Pumpkin Spice creamer over the weekend. Now I think I need to try the Frosted Vanilla Cookie next. I’ll keep my eye out for it! 🙂

I know this is a post for creamer…but do you think i could just use Bailey’s?
Hi June! I’ve never tried it with Bailey’s liquor, so I’m not sure how these bars would turn out consistency wise. You could definitely try, or sub half of the Bailey’s for milk. It’s up to you. Please let me know how they turn out!
How long do these keep? Do you keep them refrigerated? Have you ever tried to freeze them? They sound delish! I can’t wait to try them!
Hi Julie! These usually last about 3-4 days covered in an airtight container at room temp. I’ve never froze or refrigerated these, so I’m not sure how they would turn out. Hope you love them if you try it and thanks for stopping by!
