I couldn’t let the holidays pass by without sharing at least one cookie recipe, could I?

I’m sure you’ve already got your fill of holiday cookies, but today’s treat is bound to surpass them. I promise!

But, before we get to the sweet stuff, how is your December going?

We are finished with our shopping, mostly wrapped (thanks to the hubster, because I look like a 5 year old handled the gifts), and have been up to our eyeballs in holiday movies, candies, and festivities. And that’s the way I like it!

Speaking of movies, what are you favorite ones come the holidays?

My tried and true favorites never get old, and it wouldn’t be Christmas without them! Christmas Vacation, A Christmas Story, Prancer, Elf, and Home Alone (1 and 2) round out my top favorites. But, there’s about a dozen more I could add to this list, including those cheesy Hallmark and Lifetime movies!

Now, let’s get back to cookies! It just wouldn’t be Christmas without cookies, either, and I’m thinking you might just feel the same way. With cookie swaps becoming more popular and bake sales and parties galore this time of year, cookies are just about bursting out of my kitchen!

Even though you’re probably swimming in cookies by now, I guarantee you’ll love the taste and ease of this recipe. With the help of Krusteaz, you can have these gingerbread cookies made with just four ingredients. How about that for a quick holiday treat?

And did I mention that these beauties are made in one bowl? Just one bowl, four ingredients, and a little oven time. Then, when the cookies are cooled, dunk ’em in some melted dark chocolate and throw on a few holiday sprinkles. Easy peasy and a must-make for the season!

Dark Chocolate Dipped Gingerbread Cookies

These Dark Chocolate Dipped Gingerbread Cookies are soft, sweet and perfect for the holidays. Made in one bowl and topped with decadent dark chocolate, this easy cookie will quickly become a new favorite!

Ingredients

  • 1 package Krusteaz Gingerbread Cookie Mix
  • 1 egg
  • ½ cup unsalted butter softened
  • ¾ cup dark chocolate melting wafers or dark chocolate chips
  • Holiday sprinkles for topping if desired

Instructions

  • Preheat oven to 350F. Line a large baking pan with parchment paper or grease with non-stick cooking spray.
  • In a medium bowl, add Krusteaz Gingerbread Cookie Mix, egg, and butter. Stir and/or use hands to knead until mixture forms a dough, may take several minutes.
  • Drop 1 rounded tablespoon of dough onto prepared pan and spread cookies 2 inches apart. Repeat with remaining dough.
  • Bake for 10-12 minutes, or until edges of cookies are browned. Remove from oven and let cool for 5 minutes, then remove to a wire rack to cool completely.
  • Once cookies are completely cooled, add dark chocolate wafers/chips to a small bowl. Microwave on medium power for about 2 minutes to melt, stirring every 15 seconds so it doesn't burn.
  • Working one cookie at a time, dip halfway into chocolate and then place onto parchment paper to set. Sprinkle tops of chocolate with holiday sprinkles.

    Gingerbread cookies are a Christmas favourite! These look delicious and I love that they're dipped in melted dark chocolate - I definitely need to try that when I bake my next batch of gingerbread!
