Whenever I think of making breakfast, my mind automatically goes to eggs. I love eggs of all kinds and always try wo whip them up when I have the time. Whether I go out for breakfast or make a meal on a lazy Sunday morning, 99.9% of the time, eggs are involved. It’s just not a complete breakfast without them, ya know?
And whenever I go out for breakfast, I usually order some kind of skillet, with eggs, of course! I love the combination of potatoes, eggs, and veggies. It’s like all of the best foods combined into one easy meal.
And with skillets, the possibilities are endless. From fresh veggies to sausage, bacon, or ham, I’ve been known to try it all. After all, it’s so fun to try different combinations.

Because I’m always in the mood for breakfast, I decided to whip up this Roasted Maple Sweet Potato Breakfast Skillet. It’s a mouthful, pun intended!

The best ingredient in this Roasted Maple Sweet Potato Breakfast Skillet (besides the eggs) is the maple roasted sweet potatoes, of course! Man, oh man, are those good!
If you remember from a few weeks ago, I never used to like sweet potatoes. I know, I know…I’m slowly getting over that! But these maple roasted ones are delicious. These potatoes are coated with maple and cinnamon and roasted to perfection. They make the perfect base for this tasty skillet.

Green and red peppers also make a tasty vegetable in this skillet. I sauteed them until they were tender and then tossed them in with the potatoes. Add in some cooked, crumbled bacon for a smokey crunch.
And now onto the eggs. I chose to top this Maple Roasted Sweet Potato Breakfast Skillet with eggs prepared over easy, but feel free to whip up scrambled ones if you prefer those. I love cutting into the eggs and having the yolks run into the potatoes. Mmm mmm good!
This Maple Roasted Sweet Potato Breakfast Skillet is easy to prepare and makes the best breakfast or dinner. The cozy flavors from the maple cinnamon sweet potatoes pair perfectly with the eggs and veggies. One bite and I guarantee you will have found your new favorite skillet meal!

Roasted Maple Sweet Potato Breakfast Skillet
Ingredients
- 1 tablespoon butter
- 1 green pepper diced
- ½ red pepper diced
- 3 cups Roasted Maple Cinnamon Sweet Potatoes
- 5 slices bacon cooked, drained, and crumbled
- 4 eggs
- Salt and pepper to taste
Instructions
- Preheat oven to 400°F. Melt butter over medium heat in two small skillets or one large skillet.
- Add green and red pepper to skillet and saute until tender, about 5-6 minutes. Remove from heat.
- Add sweet poatoes and bacon to peppers. Stir to combine.
- Make 2 wells in each skillet (or 4 wells in one large skillet) for the egg. Crack each egg into the well.
- Bake for 8-10 minutes, or until eggs are set. Remove from oven. Season with salt and pepper, if desired.
