Strawberries and Cream Croissant Bake

This Strawberries and Cream Croissant Bake is bursting with fresh strawberries, sweetened cream cheese and soft croissants. It’s an easy, make-ahead dish that’ll be the perfect addition to your breakfast or brunch table!
Spring is finally here!
I’m trying to soak up as much of the nice weather that I can (even though it’s been unseasonably cold lately in Chicago) and indulge in lots of fresh fruit that’s slowly starting to come in season.
And one of my favorite fruits is strawberries. I eat them year round, fresh or frozen, and love adding them to baked goodies, smoothies, and yogurt.
So now that the weather is warming up, I’ve been consuming lots of strawberries lately. And since Mother’s Day and spring festivities are beginning to start, I thought I would take my passion for strawberries and turn it into the perfect brunch dish. After all, who doesn’t like brunch?
I was inspired to make this Strawberries and Cream Croissant Bake from my love for french toast. If you remember this banana caramel version or this eggnog bake, then you can see why I love french toast. It’s easy to make and perfect to prepare the night before and then pop it into the oven in the morning.
But instead of using french bread and the standard french toast ingredients, I decided to switch it up a bit and throw in some cream cheese. And that’s where my new favorite brunch dish comes into play!
This Strawberries and Cream Croissant Bake is bursting with fresh strawberries, sweetened cream cheese and soft croissants. It’s an easy, make-ahead dish that’ll be the perfect addition to your breakfast or brunch table!
And since I’m all about the easy recipes, I knew this croissant bake would be a deliciously sweet brunch for the warmer weather that’s headed our way. It also makes a decadent dish to serve on Mother’s Day, too!
Besides the fresh strawberries and croissants, the other star of this dish is Blue Diamond Almond Breeze Vanilla Milk. I’m a huge fan of Blue Diamond Almond Milk, so it only seemed natural that I used the vanilla kind for this sweet breakfast. It’s made with quality ingredients and contains the perfect amount of flavor.
And did I mention how easy this croissant bake is to make? I love that you can prep it the night before and bake it in the morning. But if you’re short on time, you can make it the same day, too.
You’ll start by layering some croissants onto the bottom of a casserole dish, followed by some sliced strawberries. Then, you’ll whip up the cream cheese mixture and pour over the croissants. And that’s all of the prep work? Pretty easy, huh?
You can refrigerate it overnight or for at least one hour before you bake it, ensuring the the croissants soak up all of that delicious cream cheese mixture. When it’s time to bake, just pop it in the oven and let it work its magic!

Strawberries and Cream Croissant Bake
Ingredients
- 8 mini croissants, roughly chopped (I used the pre-made croissants found in the bakery section of my grocery store)
- 1 cup fresh sliced strawberries
- 12 ounces cream cheese, softened
- 1 cup white sugar
- 3 eggs
- 2 teaspoons vanilla bean paste, or vanilla extract
- ¾ cup Blue Diamond Almond Breeze Almondmilk Vanilla Unsweetened, or milk of choice
Instructions
- Lightly grease a 9x13 baking dish with non-stick cooking spray. Place chopped croissants in pan. Sprinkle with sliced strawberries. Set aside.
- In a large bowl, beat cream cheese, sugar, eggs, and vanilla with an electric hand mixer or stand mixer with fitted paddle attachment until light and fluffy. Slowly add in Blue Diamond Almond Breeze Almondmilk Vanilla Unsweetened. Beat until fully incorporated and creamy.
- Pour cream cheese mixture over croissants. Cover and refrigerate for at least one hour, or overnight.
- When ready to bake, preheat oven to 375°F. Uncover pan and bake for 35-38 minutes, or until croissants are golden brown and liquid has been absorbed.
- Remove from oven and let cool for 10 minutes before serving.
I’ve tried this with bread, but never croissants. How joyously decadent! It’s gotta happen soon. The best part about these dishes is that they’re make-ahead, so no stress the morning you need to bake it up!
