My feelings about tacos will never, ever change. I’m a big fan of Mexican food and always will be. I love just about any kind of Mexican food there is, and the more authentic, the better!
However, my feelings about popcorn shrimp have evolved over the years. I love shrimp and seafood, always have and always will, but popcorn shrimp…that’s another story.
When I was little, I disliked the texture of breaded fish and breaded shrimps. Maybe dislike it too strong of a word. I could eat it, but I preferred my fish and shrimp to be un-breaded. Grilled or broiled was the name of my game, not fried.
Until I got older. That’s when I started to enjoy quality, breaded shrimp and fish. Beer-battered and baked to perfection, it gave the seafood an extra oomph of flavor.
And since the hubster and I adore Mexican food and seafood, I decided to put my creative skills to good use. When I was shopping at Walmart last week, I stumbled upon SeaPak® products in the frozen aisle.
Although it may seem strange to find seafood in the frozen section, I can assure you that SeaPak is made from coastal tasting, high quality ingredients. In fact, it’s one of the only seafood brands that I trust, especially when it comes to shrimp.
I headed home with party-sized boxes of SeaPak Popcorn Shrimp and Beer-Battered Shrimp and couldn’t want to make a delicious meal for the hubster and I. And that’s where these Cilantro Lime Popcorn Shrimp Tacos come into play.

Then, it’s time to make the lime crema, which adds the finishing touch to these crispy tacos. Mix together some sour cream, lime juice and the lime zest.
