Guess what time it is? Breakfast time!

Even if you’re reading this in the middle of the afternoon or late at night, it’s always breakfast time. Am I right?

I’ve shared my thoughts on my favorite meal of the day here before, so I won’t bore you with the details. But let’s just say that I love ordering breakfast out, but often times make something simple (or even skip it) at home.

I’m getting better at eating breakfast, thanks to this coffee cake, that skillet, and those cinnamon rolls. But every now and then, I love to incorporate the basic breakfast staples in my house into one dish.

Sausage, eggs and cheese….that’s my idea of one delicious breakfast! So I took it one step further and made these Mini Sausage Quiches.

And because mini foods are just the cutest, I couldn’t resist taking a classic quiche and baking it into mini muffin tins. It’s makes these mini quiches perfectly portable, poppable, and all around delicious!

The best part about these Mini Sausage Quiches (besides the bold flavor) is that you can customize them depending on your preferences. Since the hubster and I love sausage, it was my go-to ingredient for this dish. But if you prefer bacon, love tomatoes, or hate mozzarella cheese, then swap them out. See how easy it is?

And because the crust of these Mini Sausage Quiches is made from pre-made pizza dough, you can have this ready to be devoured in no time. After all, I’m all about the easy recipes!

To make these, simply brown the sausage in a large skillet and then toss with some chives. Then, fill the mini muffin tins with the pizza dough, followed by the sausage, eggs, and cheese.

Pop these babies into the oven and these Mini Sausage Quiches are ready to be devoured! They’re perfect to serve for breakfast, brunch or just as a snack. But whatever the case may be, I guarantee you’ll love the zesty, cheesy flavors that are nestled in mini muffin form!

Mini Sausage Quiches

These Mini Sausage Quiches make a delicious, savory dish for your next breakfast or brunch. Filled with zesty sausage, mozzarella cheese and eggs, this recipe is perfect to satisfy your breakfast cravings!

Ingredients

  • ½ pound pork sausage
  • 2 tablespoons fresh chives chopped
  • ¼ teaspoon garlic powder
  • 1 tube (8 ounces) refrigerated pizza crust
  • 2 eggs
  • ½ cup shredded mozzarella cheese

Instructions

  • Preheat oven to 375°F. Lightly spray a 24 count mini muffin tin with non-stick cooking spray. Set aside.
  • In a large skillet, brown sausage over medium heat. Drain and then stir in chives and garlic powder. Set aside.
  • Unroll pizza crust onto a flat surface and lightly press to flatter. Cut dough into 24 squares. Place each square into muffin tin, pressing down and up the sides of pan. Fill each muffin cup with about 1 tablespoon of sausage mixture.
  • In a medium bowl, beat eggs and cheese. Spoon two teaspoons of egg mixture over the sausage mixture. Top with additional chives, if desired.
  • Bake for 20-22 minutes, or until crust is golden brown and middle is cooked through. Remove from oven and let cool for 5 minutes in pan.
