Pumpkin Chocolate Chip Cookies are an easy, one bowl recipe that's ready in no time. These cookies bake up soft and cakey, with hints of pumpkin and sweet chocolate. It's the perfect combination for an autumn sweet treat!

Ingredients
 

  • 1 cup pure pumpkin
  • ½ cup vegetable oil
  • 1 cup white sugar
  • 1 egg
  • 1 teaspoons vanilla bean paste, or vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons pumpkin pie spice
  • ½ teaspoon ground cinnamon
  • ½ teaspoon salt
  • 1 cup milk chocolate chips

Instructions
 

  • In a large bowl, whisk pumpkin, vegetable oil, sugar, egg, and vanilla.
  • Add flour, baking powder, baking soda, pumpkin pie spice, cinnamon, and salt. Stir until just combined, being careful not to overmix. Gently fold in chocolate chips.
  • Refrigerate dough for at least 1 hour. This is not required, however, dough will be sticky and hard to work with if not chilled.
  • Preheat oven to 375F. Line two large baking pans with parchment paper or lightly grease with non-stick cooking spray.
  • Using a cookie scoop, drop about 2 rounded tablespoons of dough onto sheet. Bake for 10-12 minutes, or until cookies are slightly firm around the edges.
  • Let cook for 10 minutes on baking pan, then remove to a wire rack to cool completely.
