Oven baked chicken tacos may sound a little strange, but trust me, once you try these, you’ll never go back to the regular way of making them.

Not only is this baked chicken taco recipe perfect to feed a crowd, but it’s a breeze to whip up, too. From fresh, shredded chicken, cheese (lots of cheese!), Pace® Chunky Salsa Medium, and all of those tasty toppings, this dish is ready in less than 30 minutes.

How about that for an easy weeknight dinner? These are the best chicken tacos and I think you’ll agree!

Ingredients for Baked Chicken Tacos

For this oven baked chicken taco recipe, you’ll need just five basic ingredients: 

  • Hard taco shells 
  • Cooked and shredded chicken
  • Taco seasoning 
  • Pace® Chunky Salsa Medium
  • Shredded cheddar cheese

How to Make Baked Chicken Tacos

Have I mentioned how easy this baked chicken taco recipe is? Here’s an overview of how the tacos are made: 

  1. To start, combine some shredded, cooked chicken, taco seasoning, and salsa in a bowl.
  2. Spoon the chicken mixture into hard taco shells.
  3. Top with shredded cheese and then bake for about 8-10 minutes, or until the cheese is melted.
  4. Remove from the oven, add your toppings of choice, and serve.

Chicken Taco Toppings to Try

You can top these baked chicken tacos with whatever toppings you’d like. However, a few of my favorites include: 

  • Shredded lettuce
  • Diced tomatoes
  • Sliced olives 
  • Sour cream (or plain Greek yogurt) 
  • Guacamole or diced avocado

Recipe Variations to Try

These rotisserie chicken tacos are easy to customize based on your preferences. Here are some ingredient swaps you can try: 

  • Swap out the chicken! Ground beef, shredded pork, or chorizo would be delicious in these tacos.
  • Use different cheese! Swap the sharp cheddar cheese for a Mexican blend, mozzarella, feta, or queso.
  • Toss in some sautéed onions, green and/or red peppers with the chicken to give it an extra zip!

Can This Recipe Be Made in Advance? 

No, I don’t recommend making the chicken tacos in advance. Once the taco shells have been stuffed, they need to be baked and eaten immediately as they’ll soften over time.

Tips for Making Oven Baked Chicken Tacos

  • I used the pre-shredded, already cooked rotisserie chicken that you can find near the deli section of your grocery store for ease. This way, you can skip the step of cooking and shredding your own chicken! However, you can cook and shred (or dice) your own chicken, if you prefer.
  • Make sure that the chicken, taco seasoning, and salsa is mixed well and not too liquidy, otherwise it will make the taco shells soggy.
  • I used the stand and stuff hard taco shells for these shredded chicken tacos. Regular hard shells will work, too, they just won’t stand on its own outside of the baking dish.

Baked Chicken Tacos are fast, easy, and perfect for a weeknight meal. With fresh ingredients and hardly any prep time, these tacos are perfect for when you want a no-fuss, flavorful dinner!

Ingredients
 

  • 10 stand and stuff hard taco shells, regular hard shells will work, too
  • 2 cups cups, cooked, shredded chicken, I used the cooked, shredded rotisserie chicken that you can find near the deli section of your grocery store
  • 1 envelope (1 ounce) taco seasoning, any kind
  • 1 cup Pace® Chunky Salsa Medium
  • cups shredded sharp cheddar cheese
  • Toppings: lettuce, diced tomato, black olives, sour cream, guacamole, etc.

Instructions
 

  • Preheat oven to 400°F. Lightly grease a 9x13 baking dish with non-stick cooking spray. Set aside.
  • In a medium bowl, combine shredded chicken, taco seasoning, and Pace® Chunky Salsa Medium. Stir well. **See note below**
  • Spoon about 3 tablespoons of chicken mixture onto the bottom of each taco shell. Top with shredded cheese.
  • Place shells into prepared dish and bake for 8-10 minutes, or until cheese is melted.
  • Remove from oven, garnish with your favorite toppings, and serve.

Notes

Make sure that the chicken, taco seasoning, and salsa is mixed well and not too liquidy, otherwise it will make the taco shells soggy.
