Now that the weather is finally getting warmer (hello, spring!), I’ve been cravings lots of fresh fruits and vegetables.

There’s just something about the fresh spring air that makes me want to start eating a little bit lighter and a little bit healthier. So, every time I go to the grocery store, I load up on lots of strawberries, asparagus, blueberries, and broccoli. The hubster loves eating fresh fruit as part of his lunch, and I love using the veggies for a dinner side dish or snack.

But before a few weeks ago, I couldn’t even remember the last time I bought broccoli! It’s one of those veggies that I love, but always seem to forget about.

I do love ordering it in restaurants, though. In fact, my favorite restaurant (Cooper’s Hawk Winery for those of you who are lucky to have it around you) makes the most delicious steamed broccoli. The hubster, who doesn’t like broccoli (I know, I know), even likes it. He always orders a filet there and it comes with a side of their fresh, steamed broccoli. So you know what that means…I steal it from him (or, ahem share with him), and savor every last bite.

So, since I’m a food blogger and I realized that I’ve never shared a broccoli recipes with you, it was time to change that. But I decided to take it one step further and pair this Roasted Garlic Parmesan Broccoli my favorite brand of frozen seafood. Which means that you’re 20 minutes away from having an easy and delicious dinner idea. Sounds pretty good, right?

I first had the opportunity to try Bumble Bee SuperFresh® when I made this Tilapia with Roasted Vegetable Pasta. I was hooked on the fresh flavors and convenience of preparing this fish. So when I was thinking of an easy meal idea, I immediately turned to Bumble Bee SuperFresh® once again. It’s naturally-seasoned and restaurant quality seafood that can be prepared at home. It definitely raises the bar on what you can expect from frozen seafood!

Another reason why I enjoy Bumble Bee SuperFresh® is that it’s quick and easy to prepare. If you’ve been hanging around here long enough, you know that easy (and delicious) recipes are the name of my game. And this Roasted Garlic Parmesan Broccoli couldn’t get any easier to prepare! It’s also filled with just the right amount of flavor, which will leave you coming back for more.

To start, you’ll cut two heads of broccoli into pieces and spread onto a large baking pan. Then, you’ll drizzle with some oil oil and sprinkle some minced garlic and grated Parmesan cheese on top. Toss everything together and then bake until tender.

Within 20 minutes, this Roasted Garlic Parmesan Broccoli is ready to be devoured. And what’s even better is that the Bumble Bee SuperFresh® Salmon with Garlicky Black Pepper & Extra Virgin Olive Oil will also be ready in 20 minutes, which means your weeknight dinner just got a whole lot easier.

Ingredients

  • 4 cups broccoli florets about 2 heads of broccoli
  • 3 tablespoons olive oil
  • 2 tablespoons minced garlic
  • ½ cup grated Parmesan cheese divided
  • Salt and pepper to taste
  • Juice of one lemon if desired

Instructions

  • Preheat oven to 425°F. Line a large baking pan with parchment paper or coat with non-stick cooking spray. Place broccoli onto prepared pan.
  • Add olive oil, minced garlic 1/4 cup grated Parmesan cheese, salt and pepper. Toss to combine, then spread in an even layer on baking sheet.
  • Bake for 12-15 minutes, or until tender. Remove from oven, sprinkle with remaining Parmesan cheese, and squeeze lemon juice on top (if desired).

    This looks like the perfect side dish! Everyone in our house loves broccoli so it’s definitely my go-to option when I want the boys to eat their veggies. 🙂

    And that Bumblebee seafood is SO good, right?! I keep it in my freezer for easy dinners when I know that I won’t have time to cook. It’s healthy, too!

    I also tend to love broccoli but forget to make it at home. It’s so much more fun to order at a restaurant! But this recipe might change my mind on that. I love Parmesan on my broccoli!

    For some reason dinner side dishes are always something I struggle to get creative with, and I pretty much always fall back on the same salad every night. Broccoli is one of my favorite veggies so I absolutely love this dish and definitely need to switch up my side dish routine, I’m sure the roasted garlic and parmesan is a perfect combination with the broccoli!

    I get so excited when I go to the grocery store, especially when there’s an abundance of gorgeous fruit and veggies. Sometimes I tend to overbuy, but everything looks so good, especially in the Spring/Summer months. I love broccoli, as does hubby, so we regularly have. This recipe looks delicious, Gayle!
