What’s better than some indulgent cookies made from ingredients you have sitting around in your pantry and that doesn’t need to go in the oven? These chocolate no-bake cookies take just minutes of work and most of the time is spent waiting for them to harden in the fridge. 

This easy cookie recipe has that classic peanut butter – chocolate flavor combo and the perfect fudgy, chewy texture. They are always satisfying the sweet tooth and are ready to eat in no time.   

How to make Chocolate No Bake Cookies

  • Start by lining two large baking pans with parchment paper, or just spread a long sheet of the parchment paper on the counter.
  • Then in a saucepan combine the butter, sugar, milk and unsweetened cocoa powder.
  • Set your saucepan over medium heat and begin whisking. Whisk frequently until it reaches a boil, then once it reaches a full boil stop stirring and let it boil for 1 minute. No more than 1 minute.
  • Remove the mixture from the heat and add in quickly the peanut butter, vanilla, salt, oats and stir until completely combined. 
  • Drop the mixture into prepared parchment paper using a medium cookie scoop or 2 tablespoonfuls.
  • Let cookies set then enjoy! If you want to speed up setting transfer to the refrigerator. Store the cookies at room temp in an airtight container.

How long does it take no bake cookies to set?

It takes about 30 minutes for the cookies to set, then you can store them in an airtight container at room temperature or in the refrigerator for up to 2 weeks. 

Why did my no-bake cookies not set up?

The most common reason for the no-bake cookies not to set up is boiling the mixture for too long, as a result, the cookies will turn up too dry. And also if you don’t boil the mixture long enough it won’t set properly. As soon as the butter, milk, cocoa powder, and sugar start to boil, count exactly 60 seconds and remove from the heat.

Can you freeze no bake cookies?

Yes, you can! After they have cooled down, just pop them in a freezer Ziploc bag and they’ll be good for at least a couple of months. 

Tips and variations for chocolate no bake cookies:

Once the mixture comes to a rolling boil, be sure to time for 60 seconds and then remove from heat immediately.

Don’t just bring the mixture to a simmer, it needs to start fully boiling before counting down those 60 seconds.

If the cookies are too wet, you can place them in the refrigerator which will help them to firm up.

Ingredients
 

  • ½ cup unsalted butter, cut into small chunks
  • 2 cups granulated sugar
  • ½ cup milk, any kind
  • ¼ cup unsweetened cocoa powder
  • ¾ cup creamy peanut butter
  • 2 teaspoons vanilla bean paste, or vanilla extract
  • ½ teaspoon salt
  • 3 cups quick-cooking oats

Instructions
 

  • Line two large baking pans with parchment paper. Set aside.
  • In a medium saucepan, add butter, sugar, milk, and unsweetened cocoa powder. Over medium heat, bring mixture to a boil, stirring occasionally. Once mixture is at a rolling boil, let boil for 60 seconds (no longer) and then immediately remove from heat.
  • Quickly stir in peanut butter, vanilla, and salt until smooth. Stir in oats until completely combined.
  • Drop mixture by the spoonful onto prepared pans and let sit at room temperature until cooled and set, about 20-30 minutes.
