With a name like Pumpkin ‘N Spice, it’s only fitting that I’m sharing all my favorite pumpkin and apple recipes.

I’ve been testing, retesting, and baking up fall goodies since August, so get ready for a kitchen full of cozy flavors coming your way!

To kick off fall, I’m sharing a healthy and delicious snack: Pumpkin Spice Granola!

Made with oats, pumpkin, warm spices, maple syrup, brown sugar, walnuts, pumpkin seeds, and dried cranberries, it’s crunchy, flavorful, and perfect for snacking by the handful, with milk, or on yogurt.

In fact, I love it for an easy breakfast when I’m running out the door!

After several batches of testing, I’ve perfected this recipe: just the right amount of pumpkin and sweetness, with plenty of crunch.

Trust me, you’ll love it as much as I do!

Ingredients:

  • old-fashioned oats
  • walnuts
  • pumpkin seeds
  • pumpkin pie spice
  • cinnamon
  • salt
  • light brown sugar
  • pumpkin
  • melted coconut oil
  • maple syrup
  • dried cranberries

How to make:

  1. Preheat oven to 350F. Line a large baking pan with a silpat mat or parchment paper. Set aside.
  2. In a large bowl, combine the oats, walnuts, pumpkin seeds, pumpkin pie spice, cinnamon, and salt. Set aside.
  3. In a medium bowl, whisk together the brown sugar, pumpkin, coconut oil, and syrup until thoroughly combined.
  4. Pour the pumpkin mixture over the oats and stir well, ensuring that the oat mixture is entirely covered.
  5. Spread granola evenly onto prepared baking sheet and place into oven.
  6. Bake for 25-30 minutes until golden brown, stirring every 10 minutes to avoid burring. However, if you like granola clusters, do not stir while cooking. This will ensure that you get those large, crunch clusters.
  7. Remove from oven and let cool completely on baking pan. Toss with dried cranberries and keep covered in an airtight container.

  • ¾ cup pumpkin seeds
  • 3 teaspoons pumpkin pie spice
  • ½ teaspoon cinnamon
  • ½ teaspoon salt
  • ¼ cup packed light brown sugar
  • ½ cup pure pumpkin
  • ½ cup melted coconut oil
  • cup maple syrup
  • 1 cup dried cranberries

Granola will keep in an airtight container for up to one month.
