Ingredients: 

To make these savory baked sweet potato cubes, you’ll need the following: 

  • Sweet potatoes 
  • Olive oil
  • Grated Parmesan cheese
  • Italian seasoning 
  • Garlic powder
  • Salt and pepper 
  • Parsley

How to Make Crispy Roasted Sweet Potatoes in the Oven:

  1. Preheat the oven to 400°F and get your large baking pan out. Coat it with non-stick cooking spray or line it with parchment paper. Set it aside.
  2. In a medium bowl, combine the olive oil, Parmesan cheese, Italian seasoning, garlic powder, salt, and pepper.
  3. Add in the diced sweet potatoes and toss to coat.
  4. Spread the potatoes in an even layer onto your baking pan, then pop them in the oven to bake until they’re lightly browned and crispy.
  5. Remove the pan from the oven and let the crispy sweet potatoes cool for 5 minutes. Then sprinkle them with extra Parmesan cheese and chopped parsley, if desired. Serve immediately!

These savory roasted sweet potatoes need to cook at 400°F for 32 to 35 minutes.

Recipe Variations to Try:

  • Try different seasonings! There are a lot of different herb blends out there, or stick with something classic like rosemary or thyme.
  • Switch up the garlic powder for fresh minced garlic! Use 3 to 4 cloves of garlic (depending on their size).
  • Try using a flavored olive oil instead of plain olive oil! Fun options to try would be rosemary, tuscan herb, or hot pepper.
  • If you want to bring a little heat to these roasted sweet potatoes, add in half a teaspoon of ground cayenne pepper.

Can I Prep These in Advance? 

If you need to make these ahead of time, you could cube the sweet potatoes and then toss with some olive oil and refrigerate until ready to season and cook. I would only do this up to a day in advance, though.

You could also cook the savory sweet potatoes ahead of time and reheat them just before serving, but you might lose some of the crispness that way. 

Tips and Tricks:

  • Sprinkle on just a little more Parmesan cheese for the finishing touch. I mean, you can never have too much cheese…am I right?
  • Roast these sweet potatoes on parchment paper for easy clean up!
  • Toss the potatoes about halfway through the cooking time to make sure all sides get browned evenly.
  • If you don’t have fresh parsley, use dried parsley to give it a little flavor and still get a great pop of color.

  • 3 large sweet potatoes, (peeled and diced into small cubes)
  • 3 tablespoons olive oil
  • 4 tablespoons grated Parmesan cheese
  • 2 teaspoons Italian seasoning
  • 1 teaspoon garlic powder
  • Salt and pepper, (to taste)
  • Parsley for garnish, (if desired)

Instructions
 

  • Preheat oven to 400°F. Lightly coat a large baking pan with non-stick cooking spray or line with parchment paper. Set aside.
  • In a medium bowl, combine the olive oil, Parmesan cheese, Italian seasoning, garlic powder, salt and pepper. Add diced potatoes and toss to coat.
  • Spread potatoes in an even layer onto prepared pan. Bake for 32-35 minutes, or until lightly browned and crispy. Remove from oven and let cool for 5 minutes. Sprinkle with extra Parmesan cheese and parsley, if desired.
