What Kind of Chocolate Works Best for Dipping?
Chocolate melting wafers (I love this brand) are the easiest for dipping since they are made to melt smoothly. However, semi-sweet, dark, milk, or even white chocolate also works.
Ingredient Notes:
- Brownie mix: Use your favorite boxed brownie mix for this recipe. Fudgy mixes work best because of the soft center that will help form the truffles. You”ll also need the ingredients listed on the box to prepare the brownies.
- Chocolate: I love to use Ghirardelli chocolate melting wafers for dipping, as it’s specifically made to be a dipping chocolate. It melts very easily and no coconut or vegetable oil is needed to thin it out. However, chocolate chips would work just as well if that’s all you have.
- Toppings: This is optional, but adds a fun flair. Red and green sprinkles would be perfect for the holidays, or you can top the balls with crushed nuts or a drizzle of melted white chocolate.

How to Make:
Not only is this easy dessert recipe ready in no time, but it’s decadently delicious. Be sure to check out the recipe card towards the bottom of the page for a full list of ingredients and directions.
- Bake the brownies: Prepare and bake the brownies according to the package directions, being careful not to overbake, as we want the truffles to be fudgy. Let cool completely.
- Crumble: Once the brownies are cooled, cut off the edges of the brownies and then use a fork to scrape the brownies into a large bowl. Mash together until soft.



- Form the truffles: Scoop a heaping tablespoon of brownie, roll into a ball, and place onto a parchment lined baking sheet. Repeat with the remaining brownies and then refrigerate until firm. This step is optional, but will help the balls to not fall apart when dipped into the warm chocolate.
- Melt: Pour the chocolate wafers or chips into a microwave-safe bowl and microwave until chocolate is melted and smooth.
- Dip: Using a fork or toothpick, dip each truffle completely into the melted chocolate and place back onto the parchment-lined sheet pan. Top with sprinkles, crushed nuts, etc., if desired. Repeat with remaining brownies.



How to Store:
The brownies will keep in an airtight container at room temperature for up to 3 days. If refrigerated, the truffles will last for up to 1 week.
To freeze: Place the truffles in a single layer on a baking sheet and freeze until firm, then transfer to a freezer-safe container or bag and freeze for up to 3 months. When ready to serve, let thaw completely in the refrigerator.
Do I Have to Use Cream Cheese or Frosting?
No! Since we’re using fudgy, softer brownies (remember not to overbake them), no binder is needed to hold everything together.

Why are My Truffles Falling Apart?
If the brownies are overbaked or too dry, the mixture may not stick together.
How Do I Fix Uneven Chocolate Coatings?
Dip one truffle at a time, then gently tap off the excess chocolate, and let it drip before placing onto the parchment paper. A drizzle of chocolate on top can hide imperfections or cracks!
Variations:
- White chocolate: drip the balls into melted white chocolate for a sweeter twist.
- Holiday: Roll or sprinkle the truffles with red and green sprinkles for Christmas, orange and black for Halloween, or pastel colors for Easter.
- Nutty: Before the chocolate sets, sprinkle with crushed pecans, walnuts, or almonds for extra crunch and flavor.
- Peanut butter: Melt some peanut butter and drizzle over the chocolate coating for a sweet and salty combo.
- Mint chocolate: Stir in a few drops of peppermint extract into the melted chocolate for a minty flavor.

Tips and Tricks:
- Use a fudgy brownie mix or slightly underbake: A fudgier, softer mix will hold together better than a cakey brownie.
- Trim the edges: Cut off the edges or hard corners, as they won’t mix well with the softer pieces.
- Line your pan: Line your baking sheet or surface with parchment paper so the truffles don’t stick once dipped in chocolate.
- Decorate right away: Add the sprinkles, nuts, etc. as soon as the truffles are dipped in chocolate so everything sticks. If you wait too long, the chocolate will set and become hardened.

Brownie Truffles
Ingredients
- 1 (15.25 ounce) box brownie mix, (plus ingredients on back of box to make brownies)
- 2 (10 ounce) packages Ghirardelli chocolate melting wafers, (or roughly 2½ cups chocolate chips)
- Sprinkles, for topping
Instructions
- Prepare and bake brownies according to package directions, being careful not to overbake. Let cool completely.
- Cut off the edges of the brownies and discard (or save to eat), as I find they can be hard and will affect the texture of the truffles. Using a fork, scrape the brownies into a bowl and then mash together until soft.
- Scoop a heaping tablespoon of brownie, roll into a ball, and then place onto a sheet pan lined with parchment paper. Repeat with the remaining brownies. Optional: chill for at least 15 minutes to harden slightly.
- Add chocolate wafers or chocolate chips to a microwave safe bowl and microwave for 1-2 minutes or until chocolate is melted, stirring every 30 seconds so it doesn't burn.
- Use a fork or a toothpick to dip each brownie ball into the melted chocolate to cover completely. Place back onto parchment paper and top with sprinkles. Repeat with remaining brownie balls. Store truffles in an airtight container at room temperature for up to 3 days or in the refrigerator for up to 1 week.
