Ingredients for Mini Cherry Pie Bites

I’m not even sure that you can call this a recipe, as these mini cherry pie bites are just two ingredients. Well, if you add the whipped cream and graham cracker crumbs, four ingredients, but still. You really can’t get much easier than this!

The secret (or not-so-secret) ingredients to making these bites a breeze to whip up are mini fillo shells and canned cherry pie filling. That’s it! No complicated ingredients and no oven required.

I have a soft spot for cherry pie filling dessert recipes — they’re a winner every time!  

How to Make Mini Cherry Pie Bites

It’s no secret that I love mini foods, so these Cherry Pie Bites fit the bill in every way: easy to make, mini (portable, poppable), and bursting with flavor!

  1. Arrange fillo shells on a serving tray or pan.
  2. Spoon 1 tablespoon (about 3 cherries) into each cup.
  3. Right before serving, top with whipped cream and a sprinkle of crushed graham crackers, if desired

You can have these pie bites ready in about 5 minutes. How about that for a simple summer dessert?

Can This Recipe be Prepared in Advance? 

It’s best to make this cherry pie filling dessert right before serving, as the cherry filling may make the fillo shells a bit soggy. However, if preparing ahead of time, refrigerate and then top with whipped cream just before serving.

Can I Use Another Type of Pie Filling? 

I don’t see why not! Use any canned pie filling you’d like to make these mini pies seasonally appropriate. 

Tips for Making Cherry Pie Bites

  • There is no need to make the fillo shells, as they are ready to go right out of the package.
  • Feel free to jazz up the pie bites to your liking. Add in some chocolate chips, use chocolate whipped cream on top, the possibilities are endless!
  • Leftover mini cherry pies will last about 48 hours in the fridge, noting that they will soften over time.

  • 2 (1.9 ounce) boxes mini frozen fillo shells , (will make 30 bites)
  • 1 (21 ounce) can cherry pie filling
  • Whipped cream, for garnish , (optional)
  • Crushed graham crackers, for garnish, (optional)

Instructions
 

  • Arrange fillo shells on a serving tray or pan.
  • Spoon about 1 tablespoon (about 3 cherries) into each cup.
  • If not serving right away, refrigerate (see note below).
  • Right before serving, top with whipped cream and a sprinkle of crushed graham crackers, if desired.

Notes
