I’m going to be completely honest with you today.

Sometimes I have absolutely no motivation to be in the kitchen.

Testing recipes, making dinner, and even cleaning the kitchen sound like the biggest chore to me at times. All food bloggers (and just everyone in general) go through slumps like this, so it’s totally normal.

But when it’s my job, sometimes it’s a little harder to muster up the inspiration to crank out new recipes.

I’m not even sure that you can call this a recipe, as these Cherry Pie Bites are just two ingredients. Well, if you add the whipped cream and graham cracker crumbs, four ingredients, but still. You really can’t get much easier than this!

The secret (or not-so-secret) ingredients to making these bites a breeze to whip up are mini fillo shells and canned cherry pie filling. That’s it! No complicated ingredients and no oven required.

It’s also no secret that I love mini foods, so these Cherry Pie Bites fit the bill in every way: easy to make, mini (portable, poppable), and bursting with flavor!

You can have these pie bites ready in about 5 minutes. How about that for a simple summer dessert?

Some tips to remember:

  • It’s best to make these right before serving, as the cherry filling may make the fillo shells a bit soggy.
  • There is no need to make the fillo shells, as they are ready to go right out of the package.
  • Feel free to jazz up the pie bites to your liking! Add in some chocolate chips, use chocolate whipped cream on top, the possibilities are endless!

These Cherry Pie Bites are simple to make and bursting with the classic pie flavor. Ingredients

  • 2 (1.9 ounce) boxes mini frozen fillo shells (will make 30 bites)
  • 1 (21 ounce) can cherry pie filling
  • Whipped cream and crushed graham crackers for garnish if desired

Instructions

  • Arrange fillo shells on a serving tray or pan.
  • Spoon about 1 tablespoon (about 3 cherries) into each cup.
  • If not serving right away, refrigerate (see note below).
  • Right before serving, top with whipped cream and a sprinkle of crushed graham crackers, if desired.

Notes

Cherry Pie Bites are best served right away, as the fillo shells may get soggy from the pie filling.
If preparing ahead of time, refrigerate and then top with whipped cream just before serving.

    I love cherry pie but it's so time consuming. These little bites are perfect for a quick fix and I love those mini phyllo shells!
