  • 2 eggs
  • cup melted coconut oil , (vegetable oil can also be used)
  • 1 (15.25 ounce) box yellow cake mix, (I used this kind)

  • Preheat oven to 350℉. Grease a 9×5 loaf pan with cooking spray. Set aside.
  • In a large mixing bowl, add the mashed bananas, eggs, oil, and vanilla (if using) and whisk well. Stir in cake mix until just combined, being careful not to overmix (otherwise the bread will end up dense and not light and fluffy).
  • Pour batter into prepared loaf pan. Bake for 45-50 minutes, or until the edges are set and a toothpick inserted into the center comes out mostly clean. Let cool in pan for 5 minutes, then remove bread and place on a wire rack to cool completely.
