One of the biggest challenges with baked chicken recipes is getting that crispy texture without frying. Many recipes turn out soggy or bland, especially when the coating doesn’t brown properly in the oven.
This recipe solves that problem by combining melted butter with panko breadcrumbs and parmesan cheese, creating a crust that bakes up crispy, golden, and full of flavor.
And to make sure this works every time, I tested this recipe 3 times to ensure you’re getting a quality dish.

Ingredient Notes:
This parmesan breaded chicken uses simple pantry ingredients that come together to create a flavorful, crispy coating.
- Unsalted Butter: Melted butter helps the breadcrumb mixture stick to the chicken and adds rich flavor. It also helps the coating bake up golden and crisp in the oven.
- Panko Breadcrumbs: This creates a lighter, crunchier crust than regular breadcrumbs.
- Parmesan Cheese: Grated parmesan adds salty, nutty flavor and helps form the golden crust as the chicken bakes. Freshly grated parmesan works best for flavor and texture.
- Seasonings: Garlic powder, Italian seasoning, onion powder, salt, and pepper give the coating lots of flavor.
- Boneless Skinless Chicken Breasts: Slicing the chicken breasts in half lengthwise creates thinner cutlets that cook faster and more evenly while staying juicy.

Best Parmesan Cheese to Use:
Not all parmesan cheese works the same in this recipe. Choosing the right type helps create the best flavor and crisp texture.
- Freshly Grated Parmesan: This melts and browns better in the oven, helping the coating become golden and crispy. It also has a stronger, richer flavor.
- Pre-Grated Parmesan: Pre-grated from the refrigerated cheese section can work well if you need a shortcut. Just avoid very fine or powdery parmesan, which may not create the same crispy crust.
- Shelf-Stable Parmesan (Shaker Bottle): This type is very finely grated and contains anti-caking agents, so it doesn’t melt the same way. It’s best used for sprinkling on pasta rather than for breading chicken.
For the best results, use freshly grated parmesan or refrigerated grated parmesan in the breadcrumb mixture.
How to Cut Chicken Breasts into Cutlets:
Cutting chicken breasts into thinner cutlets helps them cook evenly and stay juicy while allowing the coating to crisp up properly.
- Start by placing the chicken breast flat on a cutting board. Using a sharp knife, carefully slice the chicken horizontally through the center, creating two thinner pieces.
- This technique creates even cutlets that cook faster and prevent the outside coating from overcooking before the chicken is fully done.
- If the chicken breasts are especially thick, you can also lightly pound the cutlets with a meat mallet to create an even thickness.

5 Secrets for Crispy Parmesan Chicken:
Getting perfectly crispy baked chicken can feel tricky, but a few simple techniques make all the difference. These tips help create that golden, crunchy coating without frying.
- Slice the Chicken Thin: Cutting chicken breasts in half lengthwise creates thinner cutlets that cook faster and more evenly. Thin pieces also allow the coating to crisp up better in the oven.
- Use Panko Breadcrumbs: Panko breadcrumbs are lighter and larger than traditional breadcrumbs, which helps create a crispier texture when baked.
- Coat the Chicken in Butter: The melted butter not only adds rich flavor but also helps the breadcrumb mixture stick to the chicken while creating a golden crust.
- Bake at a High Temperature: Cooking the chicken at 400°F helps the coating brown and crisp rather than becoming soggy.
- Spray the Chicken Before Baking: A quick spray of cooking spray on top of the coated chicken helps the crust develop that beautiful golden color while baking.

Recipe Variations:
- Air Fryer Parmesan Crusted Chicken: Cook the coated chicken in an air fryer at 375°F for about 12–14 minutes, flipping halfway through, until the chicken reaches 165°F.
- Spicy Parmesan Chicken: Add ½ teaspoon crushed red pepper flakes or cayenne pepper to the breadcrumb mixture for a little heat.
- Ranch Parmesan Chicken: Mix one tablespoon of dry ranch seasoning into the breadcrumb mixture for a tangy, herby flavor.
What to Serve With Oven Baked Parmesan Crusted Chicken:
This crispy chicken pairs well with so many sides, making it an easy option for weeknight dinners.
- roasted broccoli or asparagus
- garlic parmesan potatoes
- creamy mashed potatoes
- buttered noodles or pasta
- a simple green salad
How to Store and Reheat:
- Refrigerator: Store leftover chicken in an airtight container in the refrigerator for up to 4 days.
- Freezer: Cooked chicken can be frozen for up to 2 months. Let the chicken cool completely before placing it in a freezer-safe container.
- Reheating Tips: For the best texture, reheat the chicken in the oven or air fryer at 350°F until warmed through. This helps the coating stay crispy. Alternately, you can microwave until warmed through.
Tips and Tricks:
- Use freshly grated parmesan cheese for the best flavor.
- Do not overcrowd the baking pan so the chicken crisps properly.
- Slice the chicken breasts into even cutlets so they cook evenly and quickly.
- Let the chicken rest for a few minutes before serving so the juices redistribute and the meat stays tender.
- If you want an extra crispy finish, broil the chicken for 1–2 minutes at the end of baking.
