Crock Pot Spinach Artichoke Dip

Whether it’s the holidays, game day, or party time, everyone needs a good crock pot appetizer.

And this easy spinach artichoke dip recipe is one of my favorites. Not only is it incredibly easy to make, but it’s the type of recipe that just about everyone loves.

Creamy, cheesy (made with three types of cheese!), warm, and bubbly, even the pickiest of eaters (and non-spinach lovers) will adore this dip. 

Did I mention how simple this slow cooker spinach artichoke dip is? Dump everything in your crock pot, stir, and let it work its magic. Within a few hours, the magic arrives…a deliciously savory dip that’s perfect for crackers, pretzels, chips, or even by the spoonful.

Ingredients in Crock Pot Spinach Artichoke Dip:

  • Baby spinach leaves
  • Jarred artichoke hearts
  • Cream cheese
  • Sour cream
  • Shredded mozzarella cheese
  • Grated Parmesan cheese
  • Minced garlic
  • Onion powder
  • Salt & pepper
  • Lemon juice

How to Make Spinach Artichoke Dip:

  1. In a large bowl, add all of the ingredients except lemon juice. Stir until well combined.
  2. Spoon mixture into the bottom of your slow cooker. Cover and cook on low for 2-3 hours or until the mixture is melted and smooth. 
  3. When dip is finished cooking, squeeze lemon juice over top and stir to combine. Turn the slow cooker temperature to warm and adjust seasonings, if desired. Serve with toasted bread slices, chips, crackers, and/or pretzels.

How to Store Leftovers?

Refrigerate dip in an airtight container for up to four days

Can I Use Frozen Spinach Instead of Fresh?

Yes! Frozen spinach will work well in this recipe. Simply thaw and then squeeze out the excess liquid before adding to the slow cooker.

Variations of Creamy Spinach Artichoke Dip:

  • Add more cheese or swap out a different kind! Feta or asiago cheeses would be a delicious addition.
  • Sprinkle in some cooked bacon or diced red or green bell peppers for more flavor.
  • Stir in some diced chicken, shrimp, or even chorizo before serving to make this dip even heartier.

Can This Fresh Spinach Artichoke Dip be Made Ahead of time?

Absolutely! You can make this dip 1-2 days ahead of time. Cook according to the directions and then refrigerate once cooled. When ready to serve, warm in the crock pot until melted and bubbly.

Ingredients
 

  • 10 ounces chopped baby spinach leaves, (if using frozen spinach, thaw and drain excess liquid)
  • 1 (14 ounce) jar artichoke hearts, drained and chopped
  • 8 ounces cream cheese, cubed
  • 1 cup sour cream
  • ¾ cup shredded mozzarella cheese
  • ¾ cup grated Parmesan cheese
  • 2 teaspoons minced garlic
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ¼ teaspoon salt
  • 1 tablespoon fresh lemon juice

Instructions
 

  • In a large bowl, add all of the ingredients except lemon juice. Stir until well combined.
