One thing you may (or may not) know about me is that I love to read. I consider myself a bookworm and enjoying settling down with a good book whenever I can.

Mainly fiction books, though I do have a hefty collection of cookbooks, and occasionally, I’ll read a biography of someone I admire, if the mood strikes.

My favorite author at the moment is Liane Moriarty. Have you read her books? And have you watched Little Big Lies yet? I haven’t (I’m waiting to binge watch it ALL), though I have read the book. I also just finished reading A Dog’s Purpose and A Dog’s Journey by W. Bruce Cameron. It’s a must for dog lovers and such a good book! Yes, it might make you tear up, but in a good way!

If anyone has any good book recommendations, send them my way. I’m always looking for new reads!

When I was younger, I had quite the book collection. The Babysitter Club was my all-time favorite series. I was even apart of their fan club, and met the author for an autograph. My friend and I even tried to start our own club, but that didn’t work too well. Cheesy much? Luckily, I saved a few of those books, and I vow to read them again, and soon! And just for the record, Stacey was my favorite.

I also love Sweet Valley books, though I never really got into the twins or high school series, only the college series! Go figure, right? I also loved Judy Blume books, a collection of the Full House books (anyone remember those?), R.L. Stine ones (the teen ones, not the kid’s series), and a smattering of other books. Oh, the memories!

And now that spring is officially here, I couldn’t be more excited! The warmer weather means that I can spend more time outside, and that involves curling up with a good book and some ice cream in the sunshine.

I mean, you gotta have ice cream when the weather gets warm, am I right? Well, let’s face it, ice cream is needed year round, but especially when it’s nice out.

One of my favorite brands of ice cream is Blue Bunny®. For more than 80 years, they’ve been bringing delicious ice cream made with fresh and fun ingredients to families everywhere. When I was shopping at Walmart last week, I stumbled across their new lineup of ice cream flavors and treats for 2017. One flavor that I couldn’t wait to try was the Blue Bunny® PB ‘N Cone™. It has swirls of creamy peanut butter and chocolate dipped cone pieces throughout vanilla ice cream. Sounds pretty good, right?

Blue Bunny® also came out with several other new flavors, such as Rockin’ Rocky Road™, Monster Cookie Mash™, Toffee Brownie Twist™ and Mint Cookie Crunch. Cherrific Cheesecake, which was only available seasonally, is now available year-round. They all sound delicious and I can’t wait to try them!

After stocking up on Blue Bunny® PB ‘N Cone™, Mint Cookie Crunch, and Cherrific Cheesecake, I headed home to create an ice cream-inspired snack that would go perfectly with a good book!

And like most of my recipes, these ice cream sundae nachos are a breeze to whip up. Simply load some waffle cones onto a plate or bowl, followed by generous scoops of Blue Bunny® PB ‘N Cone™. Drizzle some hot fudge, sprinkles, and peanut butter chips on top, followed by the whipped cream and a cherry.

Ingredients

  • 6 waffle cones
  • 4 scoops Blue Bunny® PB 'N Cone™ ice cream
  • 3 tablespoons hot fudge sauce
  • 2 tablespoons peanut butter chips
  • Sprinkles whipped cream, maraschino cherry, for garnish

Instructions

  • Break waffle cones into large chunks and spread onto a plate or bowl.
  • Top waffle cones with Blue Bunny® PB 'N Cone™ ice cream. Drizzle hot fudge over ice cream.
  • Add peanut butter chips, sprinkles, cherry, and whipped cream.
  • Serve immediately.

    Talking about all of those books has me feeling very nostalgic, Gayle! I love them all, too! The Babysitters Club was def one of my favorites and a friend and I used to pretend we were them and recreate are favorite books. My favorite was Claudia! Anyway, these sundae nachos look absolutely sinful!! My mouth is watering :)

    I was the biggest book worm when I was younger, and while I still love to read I honestly don't do it enough. I need to change that! And I've never seen ice cream sundae nachos -- this is the best idea! This is such a great idea for a kids party or just for myself. haha Love it!

    I haven't watched Big Little Lies yet, but my sister in law has. I'll definitely have to check out (perhaps the book first, though). I always like to read the book and then watch the movie/show first rather than the other way around. Geeez, I remember those book series! And so cute that you started your own club, lol :D Definite memories, right? I don't recall seeing Blue Bunny ice-cream around here, but looks like they have some delicious flavours; that PB N Cone is definitely calling my name and what a fun recipe having sundae 'nachos'.     I love Liane Moriarty's books!! And I also loveeeeed the babysitter's club growing up! By far my very favorite! These sundae nachos are making me feel like summer! We had some really warm days last week but the last two days have been cold again!
