The best part of these Caramel Apple Cheesecake Bars, besides the decadent taste, is how easy these bars are to prepare. But, you knew that was coming, right? Even though the ingredient list looks long, trust me, it’s simple to prepare!

To sweeten the batter of the cheesecake, I added apple pie spice. It gives it a hint of flavor, without being too overpowering. And instead of a graham cracker crust, I used a combination of brown sugar, flour, and butter.

And then there’s the topping. Swoon. Aren’t caramel apples the best?

I just diced up a few Granny Smith apples, tossed them with a cinnamon sugar mixture, and then sprinkled them on top of the cheesecake batter. And for the streusel, the ingredients get mixed together in one bowl, and then are tossed over the apples. Easy peasy, right?

Ingredients
  

Crust:
  • 1 cup all-purpose flour
  • ¼ cup light brown sugar
  • ½ cup unsalted butter softened
Apples:
  • 2 Granny Smith apples peeled, cored and diced
  • ½ teaspoon ground cinnamon
  • ½ teaspoon white sugar
Cheesecake filling:
  • 2 (8 ounces) packages cream cheese softened
  • 1 egg
  • ½ cup white sugar
  • 1 teaspoon vanilla bean paste or vanilla extract
  • teaspoons apple pie spice
  • Dash of nutmeg
Streusel topping:
  • ½ cup packed light brown sugar
  • ½ cup all-purpose flour
  • ¼ cup old-fashioned oats
  • ¼ cup unsalted butter softened
  • Caramel sauce for drizzling

Method
 

  1. Preheat oven to 350F. Line an 8×8 baking pan with parchment paper or aluminum foil greased with non-stick cooking spray. Set aside.
  2. In a large bowl, combine flour and brown sugar. Cut in butter with a pastry blender or hands. Combine until it resembles a course mixture. Press into the bottom of prepared pan.
  3. Bake for 10-12 minutes, or until crust is lightly browned. Set aside.
  4. While crust is baking, prepare the apples and cheesecake batter. In a small bowl, combine the apples, cinnamon, white sugar, and nutmeg. Set aside.
  5. In a large bowl, beat the cream cheese until soft and creamy with an electric hand mixer or stand mixer with fitted paddle attachment. Add in egg, sugar, vanilla, and apple pie spice, beating well to thoroughly combine.
  6. Pour batter onto prepared crust and spread evenly. Sprinkle seasoned apples over top.
  7. In a small bowl, combine the brown sugar, flour, old-fashioned oats, and butter until crumbly. Sprinkle evenly over cheesecake batter.
  8. Bake for 40-45 minutes, or until cheesecake filling is set. Remove from oven and let cool for at least one hour.
  9. Drizzle with caramel sauce and cut into bars.

Notes

Apples can either be mixed into batter or sprinkled on top.
