Air Fryer Zucchini

If you’ve got some zucchini laying around your kitchen and don’t know what to do with it, this air fryer recipe will hit the spot.

It’s a versatile veggie that has a mild taste and is so darn delicious when seasoned properly. I’m not a fan of zucchini in desserts, so you won’t find any zucchini bread or muffins around here. But savory? Savory recipes are a given. These baked zucchini chips are a favorite of mine, and similar to this air fryer version.

Besides the simplicity, this air fryer zucchini recipe is a favorite because of the texture and flavor. Using the air fryer is a great way to cook veggies takes less time than a regular oven.

Crispy, crunchy, breaded and seasoned, these tasty bites are perfect to serve with your favorite dipping sauce, such as ranch dressing or marinara sauce.

And healthier, too. Fresh zucchini makes the perfect side dish, appetizer, or snack that’s ready in no time and with ingredients you can control.

Ingredients in Air Fryer Zucchini Chips:

  • Parmesan cheese
  • Bread crumbs (or panko bread crumbs)
  • All-purpose flour
  • Garlic powder
  • Salt and black pepper
  • Red pepper flakes
  • Olive oil
  • Zucchini

How to Make Air Fryer Zucchini Parmesan:

  1. Preheat air fryer to 400°F (if your model has this option).
  2. in a medium bowl, add grated Parmesan cheese, breadcrumbs, flour, garlic powder, salt, pepper, and red pepper flakes. Set aside.
  3. Toss sliced zucchini in olive oil and then add to bowl with seasonings and toss to coat, ensuring each piece is coated evenly.
  4. Line the air fryer basket with parchment paper or spray lightly with cooking spray.
  5. Working in batches, add zucchini slices to the bottom of basket, making sure not to overlap pieces. Cook for 4 minutes, remove basket and flip each slice, and then cook for another 4 minutes, or until crisp and lightly browned. Repeat with rest of slices. Serve immediately.

How to Store Leftover Zucchini:

Store leftovers in an airtight container in the refrigerator for up to three days.

How to Reheat Zucchini:

Add zucchini slices to an air fryer basket and cook for 5-7 minutes at 400°F, or until warmed through.

Can You Freeze Air Fryer Zucchini Fries?

While I don’t recommend it, as the zucchini will most likely become soggy once thawed, you can if you prefer. Places slices in a single layer in a freezer-safe container and freeze for up to two months. When ready to serve, thaw in the refrigerator and reheat in the air fryer.

Why Did the Zucchini Turn Out Soggy?

If the zucchini pieces turned out soggy after air frying, it’s most likely because too much was used. Be careful not to oversaturate the zucchini, otherwise the breading will also become soggy.

What to Serve Air Fryer Zucchini Fritters with:

I like to serve crispy zucchini fries as a side dish with air fryer chicken thighs, herb crusted salmon, bbq chicken legs, or this baked caprese chicken.

Variations of Air Fryer Zucchini with Panko:

  • Feel free to add some summer squash or yellow squash to this recipe. It tastes similar to zucchini and is delicious when it’s in season.
  • Make zucchini gluten free: swap out the all-purpose flour for 1:1 gluten free four or almond flour and use gluten free bread crumbs.
  • Use different seasonings: Italian seasoning, rosemary, onion powder, paprika, or even taco seasoning would be a new way to make this extra tasty.

  • ½ teaspoon garlic powder

  • ¼ teaspoon black pepper
  • teaspoon red pepper flakes
  • 1 tablespoon olive oil
  • 2-3 zucchini , (sliced into ½ inch rounds and then cut each piece in half to make half circles)
