Another 30 Minute Thursday is coming at ya, friends!

I always love sharing my newest 30 minute creations with you because I like to challenge myself to create quick and easy dishes. Pumpkin ‘N Spice is all about the simple recipes, but when it involves just 30 minutes or less, from start to finish, that’s got to be a favorite of mine.

We could all use more quick and tasty meals in our life, right? Especially during busy weeknights!

And one of my favorites just so happens to involve a few staple ingredients and lots of flavor.

These Baked Chicken Ranch Taquitos are loaded with shredded chicken, cheddar cheese, cilantro, and a savory ranch cream cheese mixture. Fast, easy, and ready in less than 30 minutes, this simple dish is packed with flavor and perfect for the whole family!

Trust me when i say that these Baked Chicken Ranch Taquitos are easy to make. And soooo good! The secret to make these super speedy is to use the store-bought rotisserie chicken that’s already shredded for you. I love picking up a few of these containers for when I’m pressed on time and don’t want to cook the chicken myself.

These Baked Chicken Ranch Taquitos are loaded with shredded chicken, cheddar cheese, cilantro, and a savory ranch cream cheese mixture. Fast, easy, and ready in less than 30 minutes, this simple dish is packed with flavor and perfect for the whole family!

Of course, you could definitely cook and shred your own chicken, but if you’re looking for a fast fix, the pre-shredded chicken works wonders!

Now, let’s talk about that cream cheese filling! A block of cream cheese, some dry ranch dressing mix, and touch of cayenne pepper, shredded cheddar cheese, and cilantro…that’s it! It’s smooth, creamy, and full of flavor. Plus, the cayenne pepper gives it just a hint of spice!

After the cream cheese mixture is form, pile it onto some tortilla shells, roll tightly, and place into the oven. In about 15 minutes, these Baked Chicken Taquitos are ready to be devoured.

Some tips to remember:

  • To save time, use the store-bought rotisserie shredded chicken. That way, you can skip cooking and shredding your own chicken.
  • Be sure to lightly spray the tops of the taquitos with non-stick cooking spray. That will ensure that they don’t get too brown and crispy.

I like to serve these Baked Chicken Ranch Taquitos with some salsa and sour cream, but feel free to use whatever you have on hand. The best part about this 30 minute meal is that it’s so versatile!

Ingredients

  • 1 package (8 ounce) cream cheese, softened
  • 2 tablespoons dry ranch dressing mix
  • ¼ teaspoon ground cayenne pepper
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped fresh cilantro
  • 2 cups cooked shredded chicken I used the pre-shredded rotisserie kind from my grocery store
  • 8 small flour tortilla shells

Instructions

  • Preheat oven to 400F. Line a large baking pan with parchment paper or foil. Set aside.
  • In a large bowl, beat the cream cheese, ranch dressing, cayenne pepper, cheddar cheese, and cilantro with an electric hand mixer or stand mixer with fitted paddle attachment until smooth and creamy. Fold in shredded chicken.
  • Spoon about 2-3 tablespoons of chicken mixture onto the center of each tortilla shell. Roll tightly and place onto prepared baking pan. Spray each tortilla lightly with non-stick cooking spray.
  • Bake for 15-18 minutes, or until tortillas as lightly golden and mixture is hot.
  • Serve immediately with salsa or sour cream, if desired.

    My all time favorite meal is approximately 2 minutes and 10 seconds from start to finish… but im not sure everyone would count popcorn as a meal. Lol. One of my husband’s favorite things ever? Taquitos!!! Needless to say, he’d be all over these, BUT he’s going to have to fight me for them, because these look absolutely delicious, Gayle!! I loooove that cream cheesy ranch!!!     Do these end up being like an enchilada without the sauce in it? Will they crisp up somewhat?
    If use corn tortilla ? Prefer not frying , love baking instead. Just would like taquitos to havethat crunch…any suggestions?

      Hi Maria! They do bake up somewhat crispy, but not as crisp as frying. You could also try broiling the tops for a minute or two to get the extra crispy if that’s what you like. These resemble more of a taco than an enchilada, at least in my opinion! I’ve never used corn tortillas, so I can’t say for sure how those would turn out. Hope you enjoy!
