Let’s talk about pizza today.
I am a pizza fanatic. I don’t think I’ve ever met a pizza that I didn’t like and I don’t think I ever will. No matter how you spin it, pizza is pizza and I heart pizza.
Now I do have favorite pizza places and prefer some kinds over the other. And since I’m from Chicago we have some amazing pies in my neck of the woods. But all in all, I think I could eat pizza all day, every day and be one happy girl.
Enter in the hubster. He loves pizza too, although he can’t eat it as much as I can. And that’s where we differ.
Me…give me a slice (or five) every week, especially on Fridays. Him…he’ll take it once or twice a month. But over the years, we’ve compromised a bit, and I think my love for pizza is ever so slowly rubbing off on him (especially when we order stuffed pizza from one of our favorite spots).
So when I got a craving for pizza a few weeks ago, I wanted to get a little more creative in hopes to lure the hubster into eating my favorite food.
We make our own homemade pizza once in a while, so I knew it was time to do that again. But this time, I got a little more fancy and made this Barbecue Chicken Pita Pizza. Filled with tender chicken, tangy barbecue sauce, and shredded Mozzarella cheese, this pita pizza is the perfect option for when hunger strikes.

The fresh chicken and barbecue sauce pair so well with the smooth mozzarella cheese. And because this pizza is made on pita bread instead of dough, you can make an individual serving just for yourself or make several for every member of your family to enjoy.

With just a few ingredients and minimal prep time, your just minutes away for devouring this Barbecue Chicken Pita Pizza.
To start, you’ll combine some cooked, shredded chicken with some barbecue sauce. Next, you’ll spread a thin layer of barbecue sauce on each pita.
Then comes my favorite part, the cheese! Sprinkle some mozzarella cheese on top of the pita, followed by the barbecue chicken and more cheese. Pop this into the oven and let it works its magic.
When the cheese is all melty and the pizza is cooked through, get ready to be impressed. This Barbecue Chicken Pita Pizza is jam-packed with flavor and sure to be a meal-time winner!

Barbecue Chicken Pita Pizza
Ingredients
- 4 flat pita breads
- 2 cups shredded chicken I used the shredded rotisserie chicken that you can find near the deli section of your grocery store
- ½ cup barbecue sauce any kind
- 2 cups shredded Mozzarella cheese
- Fresh cilantro for topping if desired
Instructions
- Preheat oven to 400°F.
- In a small bowl, mix chicken and ¼ cup barbecue until combined. Set aside.
- Spread 2 tablespoons of barbecue sauce onto each pita. Top with a thin layer of Mozzarella cheese, followed by the barbecue sauce, more cheese, and red onions. Repeat with each pita.
- Place each pita on a large baking pan. Bake for 15-20 minutes. Remove from oven and cut into slices.
