It’s a well-known fact in my household that I don’t like leftovers.
If I make something one night for dinner, there’s a 93.2% chance that I won’t eat it the following night. It’s not that I’m picky, it’s just that the reheated food doesn’t appeal to me.
I’ve been this way my whole life and begrudgingly ate leftovers when I was younger. And now that I’m an adult, I’m still pretty much the same way. There’s very few things that I will eat for a meal the second day (except for these soups and this pasta).
On the other hand, the hubster loves leftovers.
It’s one less night a week that we have to make dinner and an easy meal to just pop in the microwave. So when it comes time to eat a leftover meal from the previous night, I often turn to soup. The hubster jokes around and always asks if I’m going to have something from my “soup collection” as that is usually my go-to meal.
But instead of making some canned soup, I decided to put my cooking skills to use. My all-time favorite kind (along with chicken noodle) is this quick French Onion Soup. I love the taste, the texture of the onions, and the rich broth. And since I’ve never made it from scratch before, it was definitely the time to do so.
After researching through cook books, food sites, and Pinterest, I was shocked to find out how easy this classic French Onion Soup is to make! So I set out to make my own version of my favorite soup, and boy, did I create a winner!
This easy French Onion Soup is loaded with caramelized onions, a rich and savory broth, and just the right amount of spices. The beef broth is seasoned with just the right amount of flavors, providing the perfect touch for the caramelized onions. And because you just can’t eat this soup without lots of cheese and bread, it’s loaded on there, too.
Simply cut a loaf of French bread into thin slices and lightly brown until golden. Once the soup is ready, add in the bread and then top with shredded cheese and broil just until melted.
One bite and I was hooked! This French Onion Soup with cheese is the perfect meal for when it comes to “leftover” night, or any other night! So if you love this flavor just as much as me, then you’ll be craving this delicious soup all the time.

French Onion Soup
Ingredients
- 4 medium yellow onions sliced into thin strips
- 3 tablespoons unsalted butter
- 6 cups beef broth
- 1 teaspoon garlic powder
- ½ teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
- 6 slices of french bread
- About 1-1 1/2 cups shredded Gruyere or Swiss cheese
Instructions
- In a large pot, saute onions and butter until onions are lightly brown and caramelized, about 10-15 minutes.
- Add beef broth, garlic powder, dried thyme, bay leaf, salt and pepper. Stir to combine.
- Bring mixture to a boil, then cover and let simmer for 15-20 minutes.
- About 10 minutes before soup is done, place bread slices on a baking sheet and broil on medium heat for 2-3 minutes, or until tops are golden brown. Remove from oven and set aside. Keep broiler on medium heat.
- Once soup has simmered, pour into oven-safe bowls. Place 1 slice of bread into each bowl and then top with shredded cheese (I used about 1/4 cup cheese per bowl).
- Place back into the oven and broil on medium heat until cheese is fully melted, about 4-5 minutes.
- Remove from oven and let cool for 5 minutes.
- Serve immediately.
