Now that school is almost back in session for the kiddos in my area, I’m sure life is starting to feel more hectic. Even though I don’t have any children, I can feel the school energy in the air. It reminds me of my first days of school every year…the smell of classroom, the crisp air, the cooler mornings. It really takes me back every August. Isn’t it weird how your senses work?

These almond butter cookies are perfect for keeping the kiddos busy, too. No oven is required and just a few ingredients, so you can have your kitchen helpers whip up this tasty dessert.

And did I mention that these easy no bake oatmeal cookies are perfect for breakfast, dessert, or even a snack? If almond butter is your jam, I guarantee you’ll be reaching for this almond butter no bake cookie recipe again and again. It’s a treat that you can feel good about munching on!

The best thing about these healthy no bake cookies are that they’re made with simple ingredients. Ingredients that you probably already have in your pantry. And no refined sugar, unless you count those chocolate chips, which you can easily leave out.

And unlike most no bake cookies, these have no butter. When I was researching this type of cookie a while ago, most contained a quarter cup (or more!) of butter. No, thanks! Leave that out of my cookies, please.

Ingredients in Almond Butter Oatmeal Cookies 

Because the main ingredients of these almond butter cookies are almond butter (of course) and oats, these treats are dense and loaded with almond butter goodness. I chose to use old-fashioned oats because I like the heartier, thicker texture that it gives to these cookies. But, if you prefer quick-cooking oats, you can use those in this recipe. You may just need to adjust the amount of almond butter and honey.

Here’s what else you’ll need for this recipe: 

  • Almond butter
  • Old-fashioned oats
  • Honey
  • Vanilla bean paste (or extract) 
  • Milk chocolate chips 

How to Make Almond Butter Oatmeal Cookies 

  1. Add almond butter to a medium bowl, then add the oats, honey and vanilla. Stir well to combine. 
  2. Using an ice cream scoop or just your hands, roll batter into golf ball-sized cookies and place onto a parchment paper-lined baking pan. Flatten each cookie slightly with your hand, or the back of a spoon.
  3. Refrigerate cookies for at least 30 minutes so that they firm up.

Can I Use Quick Oats? 

Old-fashioned oats give these no bake chocolate chip cookies a heartier, thicker texture. If you prefer to use quick-cooking oats, that would work, too. You may need to adjust the amount of almond butter and/or honey.

How to Store Almond Butter No Bake Cookies

Chilling time is required to set these cookies. They will fall apart if not chilled and need to remain in the refrigerator for the best texture (and taste).

Tips for Making Almond Butter No Bake Cookies

  • Creamy almond butter works best for this recipe. If your almond butter is hard to spread, microwave it for 10-15 seconds so that it’s easier to incorporate with the other ingredients. 
  • Beware of your ingredient label with almond butter. If you’re looking to use as little sugar as possible, use almond butter with no added sugars. I buy mine from Trader Joe’s and the only ingredient are almonds. That’s it! You can find similar butters at your local grocery store, too. Just be sure to check the label.
  • If you don’t have honey on-hand, maple syrup works well, too.
  • I like to use this vanilla bean paste in all of my recipes that call for vanilla extract. The paste gives it a stronger vanilla flavor, without causing the mix to become watered down.
  • These almond butter chocolate chip cookies are completely customizable, depending on your tastes. Feel free to leave out the chocolate chips, swap in peanut butter chips, or use peanut butter instead of almond butter. The possibilities are endless!

Ingredients
 

  • ½ cup creamy almond butter
  • 1 cup old-fashioned oats
  • ¼ cup honey
  • 1 teaspoon vanilla bean paste, (or vanilla extract)
  • ½ cup milk chocolate chips

Instructions
 

  • Line a medium baking pan with parchment paper. Set aside.
  • Add almond butter to a medium bowl. If butter is hard to spread, microwave for 10-15 seconds so that it's easier to work with, if needed. You want it to be slightly creamy, easy to stir, but not liquid-y.
  • Add oats, honey and vanilla. Stir well to combine. If mixture seems too thin, add 2-3 more tablespoons of oats. If mixture is too thick, add 1-2 more tablespoons of honey and go from there. Fold in chocolate chips.
  • Using an ice cream scoop or just your hands, roll batter into golf ball sized cookies and place onto prepared pan. Flatten each cookie slightly with your hand, or the back of a spoon.
  • Refrigerate cookies for at least 30 minutes so that they firm up.

Notes

  • Cookies need to remain refrigerated so that they don't fall apart and get too soft.
  • Cookies are best kept in an airtight container for up to one week.
