It’s 30 minute Thursday, friends!

Are you as excited as I am?

Not only is it the first Thursday in October, but on this day four years ago, the hubster proposed to me.

There are several important dates that stick out in my mind when it comes to the hubster. Our wedding date (obviously), our first date, our wedding shower date (because it was exactly two months to the day of our wedding), and the day he proposed marriage.

And the day the hubster proposed will always be one of the happiest days of my life. He took me to this place in Rosemont (a suburb of Chicago), that was fairly new at the time. It’s an outdoor park of sorts, with a grassy green area in the middle, and a bunch of restaurants and bars surrounding the park. You can park your car and walk to one, or all, of the restaurants that you choose.

In the winter, the grassy area turns into an ice rink for skating, and in the summer, it’s a place for bands, festivals and summer fun. And at night, it’s magical. There are lights strung across the park that shine bright and make it almost romantic-like.

The hubster and I went there for dinner, and then walked to another place for drinks. The weather was unseasonably chilly for the first Saturday in October, so when the hubster suggested that we walk across the park, I hesitantly went along, as I was eager to get inside. As we walked towards the middle of the park, he got down on one knee, and the rest is history.

If you’ve never tried apples on your sandwich, then now is the time to start. The slightly tart apples, along with the brie and turkey create an indulgent flavor combination that just screams fall.

And paninis. Can you really go wrong with a panini? Ever since I made this Turkey Bacon Guacamole Panini, I’ve been hooked on using my panini maker all the time. So, it seemed perfect for an easy 30 minute Thursday recipe! And sshhh…this sandwich only takes about 10 minutes to make!

This Turkey, Apple and Brie Panini is also easy to customize, depending on your tastes. Don’t care for turkey? Swap it out for chicken? Like gala apples? Add those in! See what I mean?

Turkey, Apple and Brie Panini

This Turkey, Apple and Brie Panini is the perfect fall-inspired sandwich. It's packed with fresh turkey, granny smith apples, creamy brie cheese and then toasted until golden. Simple, fast, and bursting with flavor, this sweet and savory combo makes a delicious lunch or dinner!

Ingredients

  • 4 slices ciabatta or sourdough bread
  • 2 tablespoons olive oil
  • 8 slices thin turkey
  • 1 granny smith apple thinly sliced
  • 4 ounces brie cheese sliced

Instructions

  • Heat a panini press or skillet to medium heat.
  • Brush one side of each slice of bread with olive oil. Layer turkey, apple slices, and brie slices on bread.
  • Top with remaining bread slices, oiled side up.
  • Press panini making together and grill for 3-4 minutes, or until bread is golden on the outside and melted on the inside. If using a skillet, take another heavy-bottomed skillet and press on top to brown the bread. Then flip over and brown the other side.
  • Remove from press or skillet.

    What a special day! My husband proposed on my best friend's birthday, and I kept trying to invite her along to our festivities! Lol. In the end, she came after and he got in his proposal. So many beautiful memories worth celebrating! And this panini -- definitely worth celebrating!
