Not only is it the first Thursday in October, but it also marks four years since the hubster proposed to me one of the happiest days of my life.
He took me to a new spot in Rosemont (a Chicago suburb) with a big grassy park surrounded by restaurants and bars. In the summer, it’s alive with bands and festivals; in the winter, it turns into an ice rink. At night, the lights strung across the park make it magical.
We had dinner, grabbed drinks, and then, despite the unseasonably chilly weather, he suggested a walk through the park. Right in the middle, he got down on one knee—and the rest is history.

This Turkey, Apple and Brie Panini is the ultimate fall-inspired sandwich, packed with fresh turkey, crisp Granny Smith apples, and creamy brie, all toasted until golden. It’s simple, fast, and bursting with sweet-and-savory flavor, making it perfect for lunch or dinner.
If you’ve never tried apples on a sandwich, now’s the time. Their slight tartness pairs beautifully with rich brie and savory turkey for a flavor combination that screams fall.
And let’s be real, can you ever go wrong with a panini? Ever since I made my Turkey Bacon Guacamole Panini, I’ve been hooked on using my panini press. This one comes together in just 10 minutes, which makes it a natural fit for 30 Minute Thursday!
Best of all, it’s easy to customize. Swap turkey for chicken, use gala apples instead of Granny Smith make it your own!

Ingredients
This Turkey, Apple, and Brie Panini is the perfect fall-inspired sandwich—crispy bread, creamy brie, tart apples, and savory turkey all pressed to golden perfection. Quick to make and full of flavor, it’s a cozy lunch or dinner you’ll want on repeat.
- slices ciabatta or sourdough bread
- olive oil
- thin turkey
- granny smith apple, thinly sliced
- brie cheese, sliced
How to make
This panini comes together in minutes with just a few simple steps. Layer the turkey, apple, and brie between bread slices, grill until golden and melty, and you’ve got a warm, fall-inspired sandwich ready to enjoy.
- Heat a panini press or skillet to medium heat.
- Brush one side of each slice of bread with olive oil. Layer turkey, apple slices, and brie slices on bread.
- Top with remaining bread slices, oiled side up.
- Press panini making together and grill for 3-4 minutes, or until bread is golden on the outside and melted on the inside. If using a skillet, take another heavy-bottomed skillet and press on top to brown the bread. Then flip over and brown the other side.
- Remove from press or skillet.

Turkey, Apple and Brie Panini
